National Rum Day Cocktail & Mocktail Recipes Fit for a Crowd
Maybe it’s a bad thing to be so far behind that recipes served at my Fourth of July party are just now coming to the light of day, but it just so happens they were a huge hit. Just Peachy centers upon the rum theme just in time for National Rum Day. This frozen treat may be topped with brut champagne (my favorite!) or club soda. The recipe serves four. My apologies for no photo of the actual cocktail. During the Fourth of July celebrations the goal was to make sure no one’s fingers and toes were being blown to bits so the camera was aimed outdoors rather than at cocktails. We’ll see about whipping this delicious treat up again over the rum weekend.
Just Peachy – created by The Intoxicologist
1 – 10 ounce pkg. Frozen Unsweetened Peaches
6 ounces Malibu Island Melon Flavored Rum
1-1/2 ounce Peach Schnapps
6 ounces Pineapple Juice
2 ounces Apricot Nectar
Club Soda or Brut Champagne
Garnish with skewer of Pineapple if desired
Place all ingredients except club soda/brut champagne in a blender. Chop for several seconds first and then puree until the peaches are completely blended. Divide mixture between four cocktail glasses/goblets and top with 1-1/2 ounces of club soda or brut champagne.

Peach Fizz gives designated drivers, non-alcohol imbibers and children something wonderful to sip on while out and about in the heat this weekend. Mocktails are the perfect way to indulge in delicious savory sips all day long without the wicked hangover. Stirrings provides a starter base for the Peach Fizz Mocktail. Add in a few more juices, top with club soda for bubbly, grenadine for color and a frilly straw and everyone is set for an enthusiastic good time!

1 – 32 ounce bottle Stirrings Simple Peach Bellini Cocktail Mixer
1 – Quart bottle Looza Peach Nectar
12 ounces Pineapple Juice
Club Soda
Grenadine
Garnish with Pineapple
Combine Stirrings Simple Peach Bellini Cocktail Mixer, peach nectar and pineapple juice together in a pitcher. Stir. Pour into a tall glass over ice leaving an inch and a quarter at the top of the glass. Top off with Club Soda. Add a splash (1/4 to 1/2 ounce) of grenadine drizzled over the top. The Peach Fizz is also perfect for parties since it is a pitcher size recipe.
