This is a fun variation to the classic champagne cocktail. The classic champagne cocktail calls for sugar cube soaked in angostura bitters with champagne and lemon twist. This time around I’ve opted for whimsical rock candy skewer in place of the sugar cube. The rock candy lasts longer than a sugar cube, so you can use it for your second or third New Year’s Rock celebratory cocktail.

New Year’s Rock – recipe adaption by Cheri Loughlin

4 ounces Barefoot Brut Cuvee

1 dash Classic Bitters – optional but recommended

1 Rock Candy Skewer – color optional

Place dash of classic bitters in bottom of chilled champagne glass {if using}. Place rock candy skewer in champagne glass. Top with Barefoot Brut Cuvee. Sip and swirl the rock candy all night long as you refill and rock the night away!
