Ognam Spring Cocktail

The Ognam long drink is visually stunning; perfect for a spring cocktail. It contains beautiful orange, peachy hues due to the use of both mango juice and Aperol. Some spring drinks lean a bit to the floral, fruity or overly sweet side. Yet, the Ognam lights up with just the right hint of spiced sweetness due to the aperitif inclusion. Club soda rounds it out with a mist of softness. It reminds me of the way spring rain drops dance across budding flowers.

Ognam

2-1/2 ounces Mango Juice

1-1/2 ounce Brandy

1/2 ounce Aperol

Club Soda

Lemon Slice Garnish

Build in highball glass over fresh ice. Stir. Garnish with lemon slice.

Ognam is featured in Dark Spirits by A.J. Rathbun. He credits its creation to his wife, Natalie. This drink is featured with four more spring drinks at Seattle Magazine.

Aperol is an aperitif from Italy, considered a potable bitter with orange highlights. It’s made with a secret combination of herbs including bitter orange, rhubarb, chinchona and genziana. There is no real substitution since it is created with unique formula. However, one could try other potable bitters such as Campari or Cynar if they are readily available. Both are much bolder in bitter flavor, so start with smaller measurement and adjust the cocktail accordingly to taste preference.

Combine Aperol, peach nectar and lemon juice in cocktail shaker with ice. Shake to blend and chill. Strain into chilled champagne flute. Top with champagne. Garnish with lemon twist.

Prohibition Era Spirit: Aperol

Aperol, introduced in Padua, Italy in 1919, set modern day standards ahead of its time by creating a spirit with a lower alcohol content of just 11%.  The trendy and easily adaptable Aperol inspired an aperitif that went on to become the signature drink of Italy; the Aperol Spritz.  Even today, the Aperol Spritz continues to thrive as a classic.  In a cocktail world spinning with new infusions and creations released on the market every day, a classic which has stood the test of time like Aperol should not be overlooked.

Aperol is a dark orange Italian aperitif with a sweet orange flavor.  It is made from a blend of base spirit, rhubarb, chinchona, genziana and of course the best kept secret of combination herbs.  While the Aperol Spritz is the clear-cut traditional Aperol cocktail to experiment with, there are of course many recipe creations to please the palate.  Hendrick’s Gin fashioned the Unusual Negroni using Aperol rather than Campari giving the classic a unique spin.  Various modern day mixologists have taken this pre-prohibition spirit in many flavorful directions for palate pleasing cocktails sure to delight the senses.  Celebrate Prohibition Repeal Day, Saturday, December 5, with an authentic prohibition era spirit; Aperol.

Aperol Spritz

2 measures Prosecco

1 measure Aperol

Splash of Soda Water

Orange Slice Garnish

Build over fresh ice in an Old Fashioned glass. Garnish with an orange slice if desired. 

Aperol Royal

3 measures Spumante Brut

1 measure chilled Aperol

Lemon Twist Garnish

Pour chilled Aperol into a champagne flute. Top off with chilled Spumante Brut. Garnish with lemon twist spiral if desired.

Aperol Betty

2 measures Aperol

2 measures Orange Juice

1 measure Grapefruit Juice

Grapefruit Slice Garnish

Combine liquids in a cocktail shaker with ice. Shake to blend and chill. Strain into a chilled cocktail glass. Garnish with thin slice of grapefruit on rim of glass.

Aperol Classico

1/2 measure chilled Aperol

Splash Sparkling Water

Orange Peel Garnish

Chill Aperol ahead of time. Add Aperol to chilled cocktail glass or champagne flute. Top with sparkling water. Garnish with orange peel twist.

Aperol on the Rocks

2 measures Aperol

3-4 ice cubes

Orange Slice Garnish

Place Aperol in a rocks glass over fresh ice. Garnish with a fresh orange slice. Enjoy!

Build in a rocks glass over fresh ice. Garnish with orange slice if desired.

Make Mine a Manhattan Holiday

If you can’t make it to Manhattan for the holidays, bring Manhattan to a glass near you. Who would have thought there could be more than a handful of variations on the classic Manhattan recipe?  This tried and true favorite has been tweaked, pinched, played with and adapted in so many ways it becomes difficult to decipher where the classic begins and ends. With so many degrees in flavor preference and style, the base recipe sees adjustment with flavored liqueurs, juices and additional spirits.

The variations of Manhattan recipes below bring a wide variety of contrasting styles to the forefront while keeping to the thread of at least one thing in common; bourbon.  The first few closely match the classic Manhattan with call brands. After that the Manhattan gets a little more interesting.

2 ounces Woodford Reserve Bourbon

1 ounce Sweet Vermouth

1 dash Angostura Bitters

1 dash Peychaud’s Bitters

Splash of Cherry Juice

Bourbon Infused Cherry Garnish

Place liquids in cocktail shaker with ice. Stir or shake according to preference until completely chilled. Strain into chilled martini glass. Garnish with bourbon infused cherry.

1 ounce Cinzano Red Vermouth

1 dash Pernod 68 Absinthe

Place liquids in cocktail shaker with ice. Stir until completely chilled. Strain into chilled martini glass. Garnish with thin cut lemon peel over the top.

1/2 ounce Sweet Vermouth

1/2 ounce Dry Vermouth

Splash Grand Marnier

Maraschino Cherry & Orange Zest Garnish

Place ice in martini glass. Add Grand Marnier. Swirl liqueur in glass to rinse and throw out. Place bourbon and vermouths in mixing glass with ice. Place liquids in cocktail shaker with ice. Stir or shake according to preference until completely chilled. Strain into prepared martini glass. Garnish with maraschino cherry and fresh orange zest.

Rat Pack Manhattan

1-1/2 ounce Makers Mark Bourbon

1/2 ounce Sweet Vermouth

2 dashes of Bitters

Cherry Garnish

Place liquids in cocktail shaker with ice. Stir or shake according to preference until completely chilled. Strain into chilled martini glass. Garnish with cherry.

New Orleans Manhattan

1-1/2 ounce Bourbon

1/2 ounce Sweet Vermouth

1/2 ounce Frangelico

Cherry Garnish

Place ice in martini glass. Add Frangelico. Swirl liqueur in glass to rinse and throw out. Place bourbon and vermouth in mixing glass with ice. Place liquids in cocktail shaker with ice. Stir or shake according to preference until completely chilled. Strain into prepared martini glass. Garnish with cherry.

Chambord Manhattan

2 ounces Bourbon

1 ounce Chambord

Dash of Bitters

Cherry Garnish

Place liquids in cocktail shaker with ice. Stir or shake according to preference until completely chilled. Strain into chilled martini glass. Garnish with cherry.

Dubonnet Manhattan

3/4 ounce Dubonnet Rouge

1-3/4 ounce Evan Williams Bourbon

1/4 ounce Dry Vermouth

3 dashes Angostura Bitters

Lemon Twist & Cherry Garnish

Beam Black Cherry Manhattan

2 ounces Jim Beam Bourbon

Fusion Manhattan

2 ounces X-Rated Fusion Liqueur

1 ounce Maker’s Mark Bourbon

2 dashes Bitters

Squeezed Cherry Garnish

Place liquids in cocktail shaker with ice. Shake until completely chilled. Strain into chilled martini glass. Squeeze cherry and drop into cocktail.

Knob Creek Cherry-infused Manhattan

Cherry-infused Knob Creek Bourbon

1/2 – 3/4 bottle Knob Creek Bourbon

1/2 quart jar Maraschino Cherries

Drain 3/4 of the maraschino cherry juice from the jar of cherries. Pour enough Knob Creek Bourbon into the jar to refill the jar. Put the lid on the jar and allow to set for two days.

Cherry-infused Knob Creek Bourbon Manhattan

1-1/4 ounce Cherry-infused Knob Creek Bourbon

1/4 ounce Sweet Vermouth

2 dashes Bitters

Cherry Garnish

Gran Gala Shakes Things Up with a Shakedown Challenge

Gran Gala is a triple orange liqueur. They are a small brand with laid back take on the cocktail world, though serious about fresh, user friendly recipes.  Gran Gala uses brandy as its base creative spirit rather than cognac.  The brand’s legs are centered in casual dining with market pricing based somewhere around $10 less than Grand Marnier.

Aroma: Caramel, brown sugar, orange, burnt sugar, burn on the nose

Taste: Warmth, strong orange, slight lingering taste, burnt orange to caramelish, warm sugar burn rather than liquor burn.

This spirit is definitely an upgrade from generic, run of the mill triple sec liqueurs.  Where ordinary orange liqueurs add citrus flavor only, Gran Gala brings added dimension with warmth, dark brown sugar and caramelized orange.

A recent social media driven cocktail recipe contest hosted by Gran Gala generated over 100 unique submissions from bartenders and cocktail enthusiasts across the country.  The Gran Gala Shakedown Judges - photo property Cheri Loughlinbrand looked for qualities of flavor and easy drinking, originality, ease of preparation with easy to find ingredients and aesthetically pleasing presentation.  The ultimate winner was decided in part by consumer vote through the official Gran Gala Shakedown site and a panel of judges which consisted of well-known spirits authorities, educators, journalists and local mixologists, including Robert Plotkin, Sean Ludford, Angie Jackson, Benjamin Schiller, Jennifer Contraveos and myself, Cheri Loughlin.

Savoring the Flavor of Hendrick’s Gin Classic & Contemporary Cocktail Recipes

Hendrick’s Gin ventures toward the side of the unusual with its cucumber tones, medicinal shaped bottle and off the cuff sense of humor in marketing.  But this rather curious Gin begs to be reckoned with among more ‘traditional’ styled Gins consumers might be more familiar with in classic martinis and cocktails.  The flavor settles upon the palate with much the same juniper tone conventional Gin contains, but then lovely flora sneaks up behind giving Hendrick’s wonderful kick.  Some find it all cucumber, but there is a certain amount of floral or perfume to this one making it perfect for tweaking an ordinary cocktail into something extraordinary.

1 ounce Hendrick’s Gin

1 ounce Lillet Blanc

1 ounce Aperol

Orange twist

Combine ingredients and shake well with ice. Serve up and garnish with an orange twist.

Delightful.  Light rather than heavy, most likely due to the Lillet Blanc rather than sweet vermouth.  I like this one very much.  If the Classic Negroni ranks high on your list of cocktail loves, the Unusual Negroni should rank high on your list of ‘must try’ cocktail recipes.  Two more must try Negroni cocktails on your list this season; Naughty Negroni using a champagne topper and Art’ Negroni with Cynar Artichoke Liqueur/Aperitif.  All three of these twists on the classic Negroni make excellent choices for holiday gatherings this season with their classic style and flair for the unique.  The Negroni cocktail is a quick build mixed drink, low on the difficulty factor.

Fairy Belle contains this tart/perfumed twist to it that is intriguing.  The flavor causes me to sip, roll the liquid around and mull the thought of its unusualness over my taste buds.  This mixed drink plays up the floral tones of Hendrick’s Gin more than the previous cocktail recipe.  Fairy Belle is an excellent example of contemporary style drinks created from base spirits that are sometimes thought of as ‘old fashioned’ or those only consumed by an older generation.  Not so.  Gin might have been the spirit of an older generation, but it is also seeing the dawning of a new age.

1-1/2 ounce Hendrick’s Gin

3/4 ounce Dry Vermouth

Stir Vermouth and Hendrick’s Gin over ice cubes in mixing glass. Strain into martini glass. Serve with cucumber slice.

Of course the gold standard of practically any gin is the martini.  Hendrick’s served up phenomenal gin martinis at the Hendrick’s Enchanted Portal to the Peculiar party at Tales of the Cocktail 2009.  I am not so sure this particular recipe is the same proportion followed for what was served then or possibly the vermouth I used is not the same.  Play with the proportions a little.  Personally I like a little more gin shine through than vermouth.  With Gin as extraordinary and unique as Hendrick’s; savor the flavor.
