Lower Calorie Hurricane Packed with Flavor

The Hurricane is a classic cocktail yet laden with calories.  Lower the impact of calories with a few tweaks to the original Bacardi Hurricane drink recipe.  The cocktail remains easy to create and flavorful while you eye that figure friendly bikini without regret.

1/2 ounce Bacardi Superior

1-1/2 ounce Tropicana Trop50 Orange Juice

1-1/2 ounce Light Cranberry Juice

Orange Twist Garnish

Build in a Hurricane glass over fresh ice.  Garnish with orange twist.  Approximate total calories: 119

Bacardi Select Rum gives the Hurricane rich character beyond the usual.  Using Tropicana Trop50, light version of cranberry juice and cutting out both grenadine and fresh cut fruit garnishes takes out a huge amount of calories that would otherwise add little to the drink besides sugar.  The flavor is still all intact.  Think wiser when building a cocktail for lower calorie inclusion and the taste will remain while your girlish figure stays intact.

Bacardi Dragon Berry Rum: Fun, Fresh, Easily Mixable

This bottle of Bacardi Dragon Berry rum deceptively lures one into thinking it will be just another wanna be flavored spirit set to settle in a glass buried beneath soda pop.  Reading through the official Bacardi drink list of recipes it begins to seem that way before the crackling sound of the seal breaks on the bottle.

Single mixers: Dragon Berry plus Ginger Ale, Sprite, Lemonade, Iced Tea, Club Soda, Tonic Water or Sparkling Water.

The Bacardi Dragon Berry Double Mixer, Multi-Mixer and Shot Drink recipes however vary to the degree of easily mixable to muddling, unusual ingredients, and the “Wow” factor.  Dragon Berry Rum certainly turns on the flavor sensation.  All one need do is open the lid to know Bacardi figured this one out right on the money.  Dragon Berry smells precisely like sweet ripe strawberries. 

Pour this liquid in a shot glass for a good look and you will notice it is a little thicker than the usual Bacardi Superior Rum.  The strawberry is definitely glossy sugared, but still appealing in its fruity aroma.  The Dragon Berry is quite sweeter than I expected even with the overwhelmingly deep strawberry scent, but this is still not sugared like liqueurs.  Bacardi Dragon Berry is neither syrupy nor saccharine in its feel or texture.  It is summery in feel, delightful and fun.  There is slight bite on the back end when taken in neat that is most likely due to the rum or the combination of rum and the hint of dragon fruit infusion.  Although I have never had the pleasure of sampling a piece of fresh dragon fruit, I have sampled dragon fruit juice.  It is a little blander than I anticipated.  Possibly it helps balance out the strawberry in this new exotic Bacardi creation.

To my surprise with the extensive drink list supplied by Bacardi no simple Daiquiri could be found on the entire listing.  Strawberries, rum and the Daiquiri go hand in hand.

1 ounce Fresh Lime Juice

1/2 ounce Simple Syrup

Fresh strawberry for Garnish

Combine liquid ingredients in a cocktail shaker with ice.  Shake for fifteen seconds.  Strain into a martini glass.  Garnish with whole strawberry.

The fresh lime softens the flavored rum giving this a strawberry vanilla feel.  Even with the addition of bar syrup, this is not too sweet.  There is creaminess in the texture with an almost adult bubblegum feel.  If bubblegum were silky, supple, without the sugared roughness and all that remained was the fresh feeling of fun, lightness and vanilla strawberry, this would be the Dragon Berry Daiquiri.  It is also the flavored fun cocktail that is not pink. 

Strawberries and kiwi are two fruits that complement each other in exciting ways.  Fresh strawberry adds a little tangy tart bite while kiwi plugs in the juicy sweet.

1 Kiwi – peeled and quartered

1/2 teaspoon Lime Curd

1/2 ounce Fresh Lime Juice

1/4 ounce Simple Syrup

2 ounces Bacardi Dragon Berry Flavored Rum

Fresh Strawberry for Garnish

Muddle fresh fruit, lime curd, lime juice and bar syrup in the bottom of a cocktail shaker.  Add in Bacardi Dragon Berry Flavored Rum with ice.  Shake for fifteen seconds.  Strain into a martini glass.  Garnish with a fresh strawberry. 

While this is more labor intensive than the Dragon Berry Daiquiri and possibly too time consuming for most bars in a time crunch, the Dragon Berry Kiwi Chaos is definitely worth the effort for the fresh taste alone.  The kiwi cuts through any artificial sweetness one might detect while the fresh strawberry draws out the real fruit flavor.  There is still a hint of vanilla in this cocktail although obviously none added in the recipe.  Is it the rum, the dragon fruit infusion, the flavored strawberry or another flavor added to this particular rum blend? 

Inspiration strikes anywhere.  It took me two days to run down rhubarb locally.  Evidently this vegetable is quite popular.  Although in the produce section it is a veggie, it is found in the fruit section in frozen foods for those of you on the hunt.

1 ounce Half & Half

1/2 ounce Rhubarb Strawberry Syrup*

Fresh Strawberry for Garnish

Build over ice in the order given.  Garnish with Strawberry.  Insert a stir stick as this settles in the glass.  Stir.  This cocktail could perhaps be shaken over ice and served straight up as well. 

*Rhubarb Strawberry Syrup

12 ounces Frozen Rhubarb

6 ounces Frozen Strawberries

3 cups Sugar

3 cups Water

Place rhubarb, sugar and water in a large saucepan over low heat.  Slowly cook for about an hour while continuing to stir occasionally.  The mixture should never actually bubble, but heat slowly to soften the rhubarb bringing out the sweetness.  As the mixture finally heats to a degree that it does begin to bubble, place the strawberries in the saucepan.  You will need to stir more frequently.  Allow the strawberries to cook in for about fifteen to twenty more minutes before removing from the heat.  Do not allow the mixture to cool completely before beginning to strain into a tempered glass container.  As it cools it will be more difficult to strain due to the thickness.  This does not render a lot of usable syrup as much of what is left over is pulp to throw away.  After you have strained, allow the mixture to cool and refrigerate.  The syrup will stay fresh in the refrigerator in a sealed container for approximately two weeks. 

I have never tasted rhubarb before, nor have I ever had the pleasure of rhubarb strawberry pie.  What I can tell you is this cocktail is an ideal replica for strawberry shortcake with a huge dollop of whipped cream  on top that makes me want to sip it up and have another please…pretty please, with a strawberry and whipped cream.   I would even bat my eyes if that would help, but hey, I am making this drink and no eyelash fluttering is necessary. 

Yes, the syrup takes some time.  The leftover part of the syrup that is unusable for bar syrup in drinks is perfectly usable for ice cream or the foodie version of strawberry shortcake.  Take the time to make this one if you love this particular dessert.  You can have your dessert and drink it, too. 

While creating in the kitchen the other day I whipped up kiwi syrup as well.  Muddling is a lot of work to add in kiwi flavor.  Making syrup is too, but once made it lasts longer than one cocktail.

1/2 ounce Kiwi Syrup*

Club Soda to top

Strawberry & Kiwi for Garnish

Build in a Collins glass over ice.  Garnish with skewered strawberries and kiwi. 

*Kiwi Syrup

1 cup Water

1 cup Sugar

3 Kiwi – peeled & quartered

Add ingredients to a saucepan.  Simmer over low heat until the kiwi softens significantly (approximately 20 to 25 minutes).  Allow syrup to cool.  Strain into a glass container.  Seal and refrigerate.  Syrup should stay fresh for approximately two weeks in the refrigerator. 

The Dragon Berry Kiwi Club is easy, breezy, refreshing.  It is a little sweet for my taste, but the degree of syrup may be adjusted according to your taste.

Dulce de Leche: A Cocktail for More than Just “Guys & Dolls”

These days the revived classic cocktail is all the rage. Bacardi has not missed a beat since the return of “Guys and Dolls,” the classic American musical comedy about falling in love under the bright lights of Broadway. The musical returns to the stage March 1, but the vamped up version of the Dulce de Leche which plays a supporting role in this exciting classic takes center stage right now.

Just as the cast of “Guys and Dolls” returns to the stage with fresh faces (Oliver Platt from “Frost/Nixon”-“Nip/Tuck”-“Flatliners” and Lauren Graham from “Gilmore Girls”-“Evan Almighty”) Bacardi brings back the Dulce de Leche with a fresh twist while still embracing the authentic elements of the original cocktail which has been featured in the musical since its popular 1950 debut. Dulce de Leche means “drink me.” With its heavenly, decadent combination of rum, dark chocolate liqueur and sweetened condensed milk there is little wonder this liquid perfection is dessert in a glass. 

Dulce de Leche

1 measure Bacardi Superior Rum

1/2 measure Dark Godiva Liqueur

1/2 measure Sweetened Condensed Milk

Ground Cinnamon and Shaved Chocolate for Garnish

Combine liquids in cocktail shaker with ice. Shake well. Strain into chilled cocktail glass. Garnish with pinch of ground cinnamon and shaved chocolate.

Bacardi isn’t the only one getting in on the Dulce de Leche cocktail. This one’s been around a while, just not as popular as Broadway will make it out to be in the United States. According to a Diageo press release from 2005, Hispanics have been enjoying “Dulce de Leche straight out of the jar, on bread, or as part of their favorite desserts.” At the time of that media release, Diageo launched Dulseda, “the first super premium creamy liqueur inspired by the taste of the traditional Latin Dulce de Leche – a sophisticated blend of select Caribbean rums and real cream.” This cordial was conceived for Hispanics and from the input of Dulce de Leche lovers of all nationalities.

1 measure Vodka

Liquid Caramel Garnish

Combine ingredients in a cocktail shaker with ice. Shake to blend and chill. Strain into a chilled martini glass drizzled with caramel.

Key Lime Pie in a Glass

Upstream Brewing Company in the Omaha Old Market happens to be one of my favorite everyday eating establishments. It is just right for soup and salad, burger and fries, or one of their revolving daily specials. But for Friday night cocktails or beer at the bar, their Greek pizza cannot be beat. They have great food, reasonable prices, and above all else, terrific service by a wait staff who always appear genuinely happy to see me. 

Upstream is primarily known for their onsite handcrafted beers, but they also provide a variety of wines and a martini list of creative cocktails. Two fun ones recently caught my eye. One is often a blended drink, but Upstream has changed it into a straight up drink calling it a Pina Colada Martini. They also used Bacardi Peach Red, which is far from the traditional rum with coconut cream and pineapple juice.  Pina Colada Cocktail - photo copyright Cheri Loughlin - Cocktail Stock Photography www.cheriloughlin.com

I played with the ingredients for the Pina Colada Martini, finding a recipe to my liking and then tried the Upstream version. Our recipes were very similar. The Bacardi Peach Red adds a pleasant detail to the drink that is unexpected. This straight up version is a great alternative to dragging out the blender and my guess is this one also skips on quite a few calories since it exchanges coconut rum for sugared coconut cream. Instead of using heavy cream as Upstream’s version calls for, I substituted half and half. The only thing Upstream missed on the cocktail was a garnish. This cocktail definitely calls for a skewer of pineapple chunks or at the very least a maraschino cherry.  All in all, this is a great tweak on the traditional blended Pina Colada. 

Pina Colada Cocktail – adapted by Cheri Loughlin

1 measure Bacardi Peach Red Rum

1 measure Coconut Rum

1 measure Pineapple Juice

1 measure Half & Half

Pineapple Chunks Garnish

Stirrings Pina Colada Rimmer

Rim edge of chilled cocktail glass with pineapple juice. Dip in Pina Colada Rimmer. Set aside. Combine liquid ingredients in cocktail shaker with ice. Shake until thoroughly combined and chilled. Mixture should be frothy. Strain into rimmed cocktail glass. Garnish with skewered pineapple. Notation: Upstream’s version uses 1-1/2 ounces pineapple juice for sweeter pineapple flavor.

The other drink to capture my attention was far more intriguing; the Key Lime Martini. For one, I could not imagine mixing lime juice and cream together and it being reasonably worth tasting. The picture formulating in my mind was combining orange juice and milk. Ick! But primarily my interest in this drink was the liqueur. It called for Licor 43. Licor 43 is one of those liqueurs I pass on the shelf at the store, but never purchase. It was time to pick up a bottle for a tasting.

Licor 43 is Spain’s most widely exported liqueur with a distribution to over 60 countries.  Cuarenta Y Tres is Spanish for ‘43’. Apparently there are forty-three herbs, spices and flavorings added to this liqueur, consequently the name; Licor 43. This liqueur has a golden hue with hints of orange and vanilla. It is excellent as a sipping liqueur for after dinner, but even better as a secondary layer to add dimension to mixed drinks and cocktails. The Key Lime Martini is a perfect example of how layers of flavoring make or break a drink.Key Lime Cocktail - copyright Cheri Loughlin - Cocktail Stock Photography www.cheriloughlin.com

Upstream’s Key Lime Martini did have nice flavor, but was rather watery and the Licor 43 was totally lost under the Rose’s Lime Juice. The concentrated form of sweetened lime gave their version a slightly acidic, tart taste rather than the drink coming together smoothly as a whole. It is a shame to add a premium spirit such as Licor 43 to a mixed drink only to have it smothered beyond recognition. It should be used to enhance a cocktail and make it unique, memorable even.

Key Lime Cocktail – adapted by Cheri Loughlin

1-1/2 measure Vanilla Vodka

3/4 measure Licor 43

1/2 measure Fresh Lime Juice

1 measure Half & Half

Lime Twist Garnish

Crushed Graham Cracker

Rim chilled cocktail glass with lime. Dip rim into finely crushed graham crackers. Set aside. Combine liquid ingredients to cocktail shaker with ice. Shake until thoroughly blended and chilled.  Strain into rimmed cocktail glass. Garnish with fresh lime twist. 

For a weeknight or weekend out, give the cocktails and cuisine at Upstream Brewing Company in the Omaha Old Market a try. While at home try these versions of the Upstream Pina Colada and Key Lime Martinis.
