This decadently rich and creamy cocktail is a dessert lover’s dream come true. P.S. I Love You is deeply warming with its combination Irish cream and nutty sweet flavor. Irish cream and amaretto flavors shine through as primary.

I found P.S. I Love you just a tad bit too sweet for my taste. Easing back on the sweetness factor could be an easy fix for those who still want to give it a whirl. Lower the Irish Cream and amaretto to 1/2 ounce each for a little less sweetness. Carolans Irish Cream could also be substituted for Bailey’s Irish Cream. Carolans is a little less sweet. I also find it to be a little less thick than Bailey’s. These minor tweaks could bring the P.S. I Love You cocktail into the “love you forever” range.

P.S. I Love You is an excellent creamy cocktail to serve for festive holiday gatherings, girls night out parties, as an after dinner dessert style cocktail or just make when you feel a little indulgent. Let’s not forget Valentine’s Day for obvious “I Love You” reasons.

P.S. I Love You Cocktail

3/4 ounce Irish Cream

3/4 ounce Amaretto Liqueur

1/2 ounce Gold Rum

1/2 ounce Coffee Liqueur

3/4 ounce Heavy Whipping Cream

Grated Chocolate Garnish

Combine liquids in cocktail shaker with ice. Shake to blend and chill. Strain into chilled cocktail glass. Garnish with grated chocolate on top.

I used Bailey’s Irish Cream, DonQ Rum, Kahlua Coffee Liqueur and Hiland Dairy brands while sampling this cocktail recipe. Use the brands of your choice when duplicating this recipe at home. The recipe should taste similar, but not precisely the same due to variations in brand formulations.

Red Reindeer Punch made its debut at a recent Saturday afternoon football tailgate party. To be honest, at the time of the tailgate the drink still did not have a name. Naming drinks is the most difficult part for me. Creating the recipe is another ballgame completely. Requirements for this drink were simple: this had to be a red drink for team spirit and I wanted something that reflected the flavors of fall.

Even though this recipe was originally created with a tailgate party in mind, the flavors reminded me more of winter holidays. This punch recipe tastes of caramel apple, soft cranberry and ginger spice. It is a luscious caramel apple served over ice without a wallop of alcohol banging you over the head. Red Reindeer Punch is perfect for holiday gatherings with family, friends and co-workers.

So even though this red punch began with team spirit and tailgating in mind, it veered in another direction. Back to the drawing board for that tailgate drink!

Red Reindeer Punch – recipe by Mixologist Cheri Loughlin

Makes a little less than 2 gallons

1 – 750ml Bottle Pucker Sour Apple Sass Flavored Vodka

1 – 750ml Bottle Butterscotch Schnapps

1 – 750ml Bottle Gingerbread Liqueur

100 ounces (12-1/2 cups) Cranberry Juice Cocktail

50 ounces (6-1/4 cups) Apple Juice

Apple Slice or Cranberries Garnish

Chill all ingredients overnight for best results. Combine all liquids in large punch bowl or drink dispenser. Stir. Place apple slices and fresh or frozen cranberries in mixture if using large punch bowl. Save apple slices and fresh or frozen cranberries for glasses if using a sealed drink dispenser. Serve punch in rocks glasses over fresh ice. Garnish drink accordingly.

single serve

1/2 ounce Pucker Sour Apple Sass Flavored Vodka

1/2 ounce Butterscotch Schnapps

1/2 ounce Gingerbread Liqueur

2 ounces Cranberry Juice Cocktail

1 ounce Apple Juice

Garnish Options:

Apple Slice or Cranberries Garnish

Apple Slice and Caramel Candy Garnish

Build in highball glass over fresh ice. Stir. Garnish with fresh apple slice or cranberries on cocktail pick – or – Garnish with cocktail pick with apple slice, caramel candy, followed by another apple slice.

I used Pucker Vodka, Hiram Walker Liqueurs and Ocean Spray brands while creating this recipe. Homemade Ginger Vanilla Syrup can also be substituted for Gingerbread Liqueur for spicier kick and less alcohol in the completed cocktail. Caramel Apple Liqueur is also a great addition to this cocktail. Use half Butterscotch Schnapps and half Caramel Apple Liqueur for deeper caramel apple flavor.

Emerald Dragon Cocktail

As I sorted through cocktail recipes in anticipation of Halloween, I came across one with a very promising name; the Black Martini. The Black Martini seemed easy enough with three ingredients. It also sounded tasty with black raspberry liqueur and blue curacao. There was one slight problem in mixing the Black Martini. The Black Martini did not make a black drink. But it makes a brilliantly beautiful emerald green cocktail.

So the Black Martini slips on a Halloween costume and becomes the Emerald Dragon Cocktail. Don’t be fooled by the clever disguise. They are one and the same.

The Emerald Dragon is rather sweet and completely made up of alcohol. Be sure to shake this drink enough to ensure proper ice melt in the drink. I also sampled this recipe with splash of fresh squeezed lime juice (approximately 1/4 ounce) to cut the sweetness factor a bit. A little more could also be added. The lime juice did not change the emerald green color at all.

This drink could also be served on the rocks with squeeze of lime, splash of club soda and served with lime twist garnish. The color makes this drink an excellent choice for Halloween, but also festive enough for Christmas parties and an alternative green drink for St. Patrick’s Day.

Review: DonQ Pasion Rum

Puerto Rican Rum with Natural Passionfruit Flavors

60 Proof / 30% alcohol

Suggested Retail Price: $12 to $15 range

Availability: United States offices opened in June 2009 with the purpose of increasing availability to all fifty states. DonQ Pasion Rum has limited availability in US at this time.

Tasting Notes

Color: Mostly clear with just barely there tinge of ecru w/ very light peach. Not perfectly clear.  

Aroma: Detect a bit of alcohol on the nose, but no burn. Passionfruit inclusion is barely there if at all. Fruit is extremely faint.

Tasted Neat: Light sweetness. Toasted type sweetness. Burn. Passionfruit is again very light. I do like the unusual sweetness with its mix of burnt sugar, roasted fruit feel. More fruit comes through in third to fourth sip. Not liking the after taste neat, but this is not a flavor that is meant to be sipped neat. It’s meant to be paired with favorite mixers.

Mouth Feel: Upper end of light.

Possible Uses, Pairings and / or Cocktails: Variation on classic Cosmo comes to mind first, using  Passionfruit Rum version. Might also go well with orange juice with squeeze of lemon. Possibly Sprite topper.

1 ounce Passion Fruit Juice

1/2 ounce Simple Syrup

Sparkling Wine

Mint Sprig & Lemon Wheel Garnish

Combine rums, juice and simple syrup in cocktail shaker with ice. Shake to blend & chill. Strain into highball glass over fresh ice. Top with splash of sparkling wine. Garnish with mint sprig and lemon wheel.

Pasion Madras

1-1/2 ounce DonQ Pasion Rum

1-1/2 ounce Orange Juice

4 ounces Cranberry Juice

Orange Slice Garnish

Build in highball glass over fresh ice. Garnish with orange slice.
