Rob Roy

The Rob Roy is similar to the Manhattan, but only uses Scotch as the base spirit. It can also be made Sweet, Dry or Perfect. Rob Roy

1-1/2 ounce Scotch

3/4 ounce Sweet Vermouth

2 to 3 dashes Classic Bitters

Lemon or Orange Twist Garnish

Señor’s Surrender

Classic cocktails and classically styled cocktails will always remain a perennial favorite. Señor’s Surrender keeps the treasured classic Old Fashioned in mind with a Camarena Tequila twist. Spiced Orange Syrup takes the place of fresh muddled fruit and sugar. The result is barely there hit of smoke intertwining with warming notes of tequila, gentle sweetness carried by lilt of orange and great spice depth continuing through to the finish from the spiced syrup and bitters.

Senors Serender - Cheri Loughlin Cocktail Development Services2 measures Camarena Reposado Tequila

1/4 measure Spiced Orange Syrup*

2 dashes Classic Bitters

Orange Twist Garnish

Combine liquids in rocks glass over fresh ice. Stir. Garnish with orange twist. For little less sweet, use 1/8 measure Spiced Orange Syrup.

*Spiced Orange Syrup – created by Cheri Loughlin

Zest of 1 Orange

10 to 12 Whole Cloves

1 heaping tablespoon Whole Allspice

3/4 cup water

1-1/2 cup Cane Sugar

Place all ingredients in saucepan over medium heat. Heat until sugar is completely dissolved (approximately 5 minutes). Strain. Discard zest and spices. Refrigerate syrup.

Dog’s Nose

Stranger concoctions have existed, but the Dog’s Nose has deep roots in the drinking world.  It is said that the Dog’s Nose is referenced in the Pickwick Club, the first novel by Charles Dickens.  The first issue of the novel was published in 1836 with the last in 1837.  That makes the Dog’s Nose vintage indeed.Beer 064 - photo copyright Cheri Loughlin

12 measures Porter or Stout

2 teaspoons Brown Sugar

2 measures Gin

Grated Nutmeg Garnish

Claret Lemonade

Certainly there are those that cringe when wine cocktails conversation is brought to the table. There are those who believe wine should be placed from bottle to glass or bottle to decanter to glass only rather than come in contact with any other mixer. However, dabbling with concoctions of wine, spirits and simple mixers has been going on for years. In fact, making wine into lemonade is actually a classic cocktail! This classic cocktail possibly dates back to the 1800’s with many variations.

3 measures Claret*

3 measures Water

2 teaspoons Fine Sugar*

Juice of 1 Lemon*

Combine all ingredients in cocktail shaker with ice. Shake to blend and chill. Strain into Collins glass.

*May use a Bordeaux style red wine in place of Claret.

*Substitute the 2 teaspoons Fine Sugar for 2 to 3 teaspoons Simple Syrup according to preference (3 teaspoons syrup = 2 teaspoons sugar + 1 teaspoon water)

*Medium Lemon yields 2 to 3 Tablespoons fresh juice; Large Lemon yields 3 to 4 Tablespoons fresh juice – start with 2 tablespoons and add juice according to taste preference.

Bamboo

This classic cocktail dates to the 1940’s but it’s rarely found on cocktail menus. Though this is a wine cocktail, it does not conform to the sweetened, lush flavors one might think of when considering wine cocktails as Happy Hour choice. The Bamboo cocktail leans more toward dry charm with little to no sweet satisfaction.

3/4 measure Dry Vermouth

1/2 measure Dry Sherry (Fino)

2 dashes Orange Bitters

2 dashes Classic Bitters

Orange Twist Garnish

Place liquids and bitters in mixing glass with ice. Stir to chill. Strain into chilled cocktail glass. Garnish with orange twist. Variation: Add additional 1/4 measure Premium Orange Liqueur for hint of refinement, but still does not add much sweetness.

Americano

The Americano cocktail is no doubt a classic and easy build, three ingredient cocktail. Though it is also often overlooked on many basic cocktail menus, its versatility is quite amazing. There is slight sharpness layered within the swell of this sweetened red spirited drink. It could easily play out well as a holiday drink with its vibrant red color and deep, lush flavor. Americano

1 measure Campari

1 measure Sweet Vermouth

1 measure Club Soda

Orange Slice Garnish

Build over fresh ice in rocks glass.

Since the classic Americano recipe is so full bodied, I prefer a tad more club soda as topper to thin out the lushness for warmer weather sipping. My ratio is 1 measure Campari, 1 measure Sweet Vermouth, 2 measures Club Soda. The vibrant color and flavor still abound with gentler sip.

Adonis Cocktail

There are several variations of Sherry on the liquor store shelves, so be sure you choose the right one when mixing this classic cocktail. Dry Sherry is a fortified wine from Southern Spain. Look for Fino which is delicately crisp in aroma and pale to golden in color. The quality of Fino begins to deteriorate as soon as it is opened due to its delicate nature. It can be recorked and stored in the refrigerator for approximately one week, but would be ideal to use the bottle in its entirety upon opening. For that reason, the Adonis Cocktail would be the ideal “excuse” to invite friends over for a “tasting party.”

Addington Highball

Perhaps the Addington Highball would be ideal for warmer weather refreshment or cocktail party serve. This oldie but goodie recipe dates from the 1950’s or before. It’s an excellent and simple choice to serve to any ad man or for “Mad Men” themed watch parties.

Orange Twist Garnish

Place vermouth in mixing glass with ice. Stir to chill well. Strain into highball glass over fresh ice. Top with club soda. Garnish with orange peel.
