Red, White & Blue Cocktails

Fourth of July rings in the unofficial start of summer with picnics, parades, fireworks and steady flow of fun and laughter.  Keep everyone’s thirst refreshed with cocktails that utilize fresh fruits of the season and the sparkling colors of Red, White & Blue to correspond with Independence day celebrations.

Twisted utilizes a diet peach flavored water, but has no diet connotation in the drink.  The taste is fresh, light and definitely slurp worthy.

2 Fresh Pineapple Spears (1 inch x 3 inch)

1-1/2 ounce Peach Rum

2 ounces Welch’s Diet Peach Twist

1 ounce Club Soda or Brut Champagne

Muddle fresh fruit in bottom of mixing glass.  Add peach rum and Welch’s Diet Peach Twist with ice.  Shake to blend and chill.  Strain into highball glass or goblet over fresh ice.  Top with club soda or brut champagne according to preference.  Stir.

Pearl is an adaptation of the Perfect Margarita.  The real hook for Pearl is the garnish; olives.  Usually saved for classic martinis, the olive becomes the surprise find for this margarita.  My version pops up the heat with jalapeno stuffed olives. Nix the olives if they don’t float your boat, but definitely take this margarita out for a spin.

Salt for Garnished Rim

Queen Size Jalapeño Stuffed Olives Garnish

Rim cocktail glass with salt and set aside.  Combine all liquid ingredients in cocktail shaker with ice.  Shake vigorously to blend and chill.  Strain into cocktail glass over ice or even better, serve straight up.  Garnish with skewered jalepeno olives.

When I think of blueberry vodka or blueberries in general, the old television series Happy Days and Richie singing “I found my thrill on blueberry hill…” starts jingling through my head.  Thrilled brings in the beautiful flavor of blueberries while allowing the sweetness of fresh pineapple to interweave into the mix.  Depending upon your sweet tooth, vary the simple syrup.  Fresh egg white adds a little froth and complexity to the drink, but isn’t necessary for a thrilling good time.

1 Egg White – optional

Muddle pineapple and simple syrup in bottom of mixing glass.  If adding egg white, do so at this point and dry shake.  Add vodka, lemon juice and ice to mixing glass.  Shake to blend and chill.  Strain into chilled cocktail glass.

Muddling the Summer Lovin’ Margarita

Backyard barbeques, making a splash poolside, camp getaways to the lake; each marks the beginning of summer.  Good friends, tasty treats and cool refreshment go a long way to make summer satisfaction memorable.  Tequila Cazadores knows the best way to summer lovin’ and persuasive relaxation is tantalizing cocktails beyond the typical margarita.  Provide market fresh, contemporary Cazadores cocktails at your next summer soiree for a refreshing getaway that’s sure to please.

Real Sexy Sex and the City Cocktails

SKYY Sex and the City 2 Bottle - photo copyright Cheri Loughlin

Months of hype leading up to the recently released Sex and the City 2 movie leads the liquor industry scrambling for new cocktail recipes to walk down the red carpet on the way to the nearest after party.  The only reason cocktails come into play at all is due to the iconic Cosmopolitan sipped by Sex and the City character, Carrie Bradshaw, in 1998, but made famous on the cocktail circuit by Madonna when paparazzi photographed her sipping the light pink hued drink at the Rainbow Room in 1996.  This little pink drink had already been in existence in various forms, but adapted to Cosmo perfection by Dale DeGroff.

Combine liquid ingredients in cocktail shaker with ice.  Shake to blend and chill.  Strain into chilled cocktail glass.  Garnish with flamed orange peel.  Dale discusses the step by step process of how to flame an orange peel in his book, Craft of the Cocktail.

There are so many adaptations to the Cosmo it is only fitting one with champagne topper mingle into the mix for a show stopping appearance at any Sex and the City after party. Dan Crowell of Libation Association created the Champagne Cosmopolitan.

Champagne Cosmopolitan – Dan Crowell

1 ounce Belvedere Cytrus Vodka

1 dash Grand Marnier

1-1/2 ounce Cranberry Juice

1/2 ounce Fresh Lime Juice

1 Twist Orange

1 ounce Moet & Chandon White Star Champagne

Shake Vodka, Grand Marnier, cranberry juice and lime juice over ice in a cocktail shaker.  Strain into a chilled champagne flute.  Top off with champagne.  Garnish with orange twist.

The hum and buzz surrounding Sex and the City 2 would lead most to believe this movie is the height of fashion with the sexiest cocktails for stylish women everywhere to sip while gadding about in heels, flirty dresses and oversized hats.  Intersperse some gossip and gratuitous sex and everyone can be the star of their own movie.  A little farfetched in today’s busy world of working women who might be single or married, with or without children.  But the movie does give rise to the question, “What do real sexy women of the city drink when out on the town?”   This is the question asked of readers on The Intoxicologist Facebook page and those following along on Twitter.

While Sex and the City 2 has spawned many revamped cocktails with stylishly fun names befitting star status, the question still applies as to what cocktails men and women find sexy.  Is it the Cosmo or flirty cocktails creatively named specifically for the movie?  Not so surprisingly, simplicity is sexy.

Bourbon Tasting Neat - photo copyright Cheri Loughlin

Haze King says, “A good ol beer will do.”  For Heather Jenkins a simple Rum and Coke suffice.  Choose your favorite rum; easy enough.  Tanya Warren loves a little thing called Pineapple and Vodka.  Crystal Farris goes classic with Bacardi & Coke with a squeeze of lime, but prefers diet rather than the overly sugared fare.  John Southerly likes a little sexy undercurrent with his lady’s cocktail choice. He says, “Top shelf martini.  Dirty or not.  And a hint of lipstick left on the glass…” Pucker up ladies.

Several chose straight pours as their sexy drink of choice.  Joe Clayton specifies Anejo Tequila, but only from a long slender glass.  I’m imagining nicely manicured fingers delicately picking up that glass for easy sipping looks pretty darn good, too.  Rhiannon Davies agrees sipping tequila is sexy, but prefers Platina Tequila over ice with a twist of lime.  However, Rhiannon doesn’t confine sexy to just one drink choice.  She also likes Zubrowka sipped neat and Jameson 12 Year Old with exactly three pieces of ice (it could be one piece if it were Glace Ice).  LuAnn Brandle goes for the gold with Johnnie Walker Blue.    VanillaNorth of A Bourbon for Silva knows sexy and chooses Bourbon, or something “strong and straight” proving she’s far from plain vanilla.

LadiesLoveLV think The Modern Mixologist’s version of the Cable Car is “very sexy with the long orange spiral & cinnamon/sugar rim!”  They just might have something there.

Tequila Cazadores: More Than Margaritas – It’s a Cocktail Tease

Cinco de Mayo rounds the corner soon.  The United States and other countries often adopt celebrations from other countries, merging customs and traditions with their own celebratory styles.  Cinco de Mayo, historically a celebration of Mexico’s independence of France, is often confused for Mexican Independence Day commemorated as a result of the Mexican War of Independence.  Both celebrations aptly include tequila as base spirit for the widely popular Margarita and traditional Sangrita with chilled tequila shooter.  However with classic cocktails and contemporary styled martinis so popular, it pays to explore options beyond the obvious.

Cazadores Reposado Tequila Neat - photo copyright Cheri LoughlinTequila Cazadores Reposado

Aroma: Hints of sweetness, dry grass, slight caramel – but only briefly

Tasted Neat: Contains a lot of burn, fresh mown grass, slightly less sweetness in the taste from what the aroma suggests, tinge of milky cream

Finish lingers only faintly, possibly five to seven seconds at most.  Suggestion of butteriness that doesn’t quite pan out in the full flavor.  Leaves me wanting for something more that just isn’t there in the final taste.  Nice texture and character, but not my idea of the ideal sipping tequila.  Definitely see 100% de Agave Tequila Cazadores as the chilled shot tequila variety for those wanting a quick fix solution or margarita style tequila.  After a little recipe exploration and cocktail shaker play, Tequila Cazadores mixes well in cocktails one wouldn’t necessarily expect.

Teaser – adapted by Cheri Loughlin

Teaser Cocktail - photo copyright Cheri Loughlin1 ounce Tequila Cazadores

1 ounce Cointreau

1 ounce Fresh Lime Juice

1 Egg White

1/3 ounce Licor 43

Orange Twist

Combine all liquid ingredients in a cocktail shaker.  Dry shake vigorously to blend egg white with mixture.  Add ice.  Shake thoroughly.  Strain into a chilled cocktail glass.  Garnish with fresh orange twist.

Many versions of the Teaser combine tequila and triple sec with orange and grapefruit juices on the rocks.  The version above is an adaptation from the Teaser cocktail found in A Pocket Guide to Cocktails.  My adapted version calls for Licor 43 to round out the edges, pull a little of the buttery feel that didn’t quite come through in the first tasting of Cazadores, add a hint of vanilla to take away so much of the acidic tartness of the original Teaser recipe and include a wee burst of orange with specific Cointreau and orange zest.  The cocktail still contains a little tartness which was intended, but with mellow sweetness buried within.  Rather than Teaser it could now be referred to as a temptation.

Scotch Cocktail Recipes: Bobby Burns & My Darling

Last week a new cocktail creation contest rolled out on The Intoxicologist Facebook page: Scotch.  Participants were invited to create a simply made cocktail using five ingredients or less.  Participants were welcome to use scotch of their preference, but I would be recreating the cocktails with Glenfiddich Single Malt Scotch and Grant’s Blended Scotch.

When I stopped in at a local bar & restaurant, Boiler Room, that serves fabulous old style cocktails this past weekend, the bartender asked if I’d like to try a Scotch cocktail he had been playing around with for the new cocktail menu; the Bobby Burns.  Bobby Burns isn’t new, but Chris put a great new spin on it with the inclusion of barely there allspice rim that he and the chef worked out.  There is also a little fiddling with the ingredient ratios that make Bobby Burns a Boiler Room knock out.

Bobby Burns – Chris Engles, Boiler Room – Omaha, NE

Bobby Burns Scotch Cocktail - adaption by Chris Engles - Boiler Room Omaha - photo copyright Cheri Loughlin2 parts Glenfiddich Single Malt Scotch

1-1/2 part Carpano Antiqua Formula

1/4 part Benedictine

Lemon Twist

Allspice

Combine Glenfiddich, Carpano and Benedictine in a mixing glass with ice.  Stir until chilled.  Strain into a cocktail glass.  Dip fresh lemon strip twist into fresh allspice.  Rub lemon twist with allspice around rim of cocktail glass and place twist in cocktail.

Chris’ take on the Bobby Burns cocktail flavors out fabulously with allspice rounding out the deal.  The aroma lures one in for the first sip.  Carpano Antiqua Formula creates an excellent sounding board for the Glenfiddich Scotch.  Benedictine leaves just enough spice in the finish.  The kicker here is the allspice.  It definitely begins the cocktail and seals the deal beginning to end.

After tasting through entries for the scotch cocktail creation contest Bob Stafford’s, My Darling, took winning place.  There were a handful of great entries, but My Darling kept the integrity of Scotch flavor in mind and simplicity for duplication at the same time.

My Darling Scotch Cocktail - created by Bob Stafford - photo copyright Cheri LoughlinMy Darling – Bob Stafford

1-1/2 parts Grant’s Blended Scotch*

1/2 part Cointreau

1/2 part Plymouth Sloe Gin

1/2 part Fresh Squeezed Clementine Juice

2 dashes Regan’s Orange Bitters

Combine ingredients in cocktail shaker filled 1/2 way with ice. Shake and strain into chilled cocktail glass.  Rub rim of glass with a Clementine twist and garnish drink with the twist. *Bob used Johnnie Walker Black Blended Scotch Whisky

This cocktail rang out a little sweeter than my preferred taste for cocktails, especially Scotch cocktails – however My Darling plays to the strengths of Scotch rather than cover it up.  This is a great cocktail for someone who wants to play with the flavor of Scotch without going hard core straight on the rocks.

Classic Style Armagnac Cocktail Recipe: 14 Juillet

Armagnac Castarède Tasting Notes:

Straw to golden color.  Soft nut flavor with hints of ripened fruit, possibly faint floral in the finish.  Light in consistency, delicately sweet with nut skin lingering on the tongue.  Beautiful spirit!  Easily sipped as is, with a single cube to melt gracefully at will or in superbly built cocktails meant to highlight its wonderful qualities.

1 ounce Cointreau

1/2 ounce Lemon Juice

Combine ingredients in a cocktail shaker with ice.  Shake to blend and chill.  Strain into a cocktail glass.

This classic style martini plays upon the flavor of the Armagnac nicely.  A little of the nut tone is allowed to show through under the orange and lemon balance.  I like this one.  It reminds me of simple, well built classic cocktails.  Definite drink recipe to add to your repertoire of must try cocktails, especially during the holiday season.

Campari: Summer Classic

Campari truly is a classic with no need for review.  While this spirit is widely consumed overseas it is not as common in some areas of the country in the United States.  Campari might be one of those spirits sitting on the Campari Neat copyrigh Cheri Loughlinliquor store shelf that intrigues by its color, character, mystique and sexiness, but leaves the average American consumer bewildered as to what exactly to do with it in the field of cocktails.

One seems to have to acquire a taste for this particular aperitif/spirit.  Campari’s aroma is dry with barely there sweetness if any at all.  Orange spice definitely becomes prevalent.  The taste is sweet, medium in body and spicy with a dry finish and slight bitterness.  Campari is definitely not a spirit most American’s walk up to a bar and think of first off for summery cocktails on the rocks as they might a Mojito, Margarita or Cosmopolitan.  But, Campari’s unique characteristics enable classic and new style cocktail creation with outside the box thinking.  The spice tones create an excellent base for fresh orange and citrus cocktails.  Bitter chocolate becomes another possibility for this interesting spirit.

Campari Margarita copyright Cheri LoughlinCampari Margarita – ala Campari

1 ounce Campari

1-1/2 ounce Cabo Wabo Reposado Tequila

½ ounce Cointreau

1 ounce Lime Juice

Combine Campari, Cabo Wabo, Cointreau and lime juice in a cocktail shaker with ice.  Shake.  Strain into a margarita or martini glass.

The Campari Margarita smells fabulous!  The reposado shines through distinctly in the aroma.  Flavor balance between all components is well done.  Rather than orange character, there are definite cherry notes in this cocktail.  The finish is particularly drying.

Rather than overlook a spirit on the shelf for lack of knowing just what to do with it, pick it up for purchase.  Taste it as is, try it as recommended by the spirit company and then do a little experimentation on your own.  After all, what is the worst that could happen?  There may be a trickle or two of liquid that may end up down the drain if experimentation goes awry.  In all honesty every trial and error becomes a new level of learning how spirits work together.  Campari is just one spirit that adds new dimension to the cocktail.

Singapore Sling with Zing

What do the Raffles Hotel in Singapore and the MGM Grand in Las Vegas have in common? On the surface, it would appear not much. Closer examination may reveal the answer to your next drink order or cocktail party punch; the Singapore Sling or the Chinatown Sling.

Raffles Hotel Singapore via photo Tourist Board

While the Raffles Hotel is named after Sir Stamford Raffles, the founder of modern day Singapore, in the world of bartending the Raffles Hotel is more widely known as the home of the Singapore Sling. It was in the Long Bar at the Raffles Hotel where Ngiam Tong Boon is said to have invented the Singapore Sling sometime between 1910 and 1915. The recipe for this drink was such a secret that it was kept locked away in a safe along with Ngiam’s other recipe books. Somewhere along the way, however, the original recipe to the Singapore Sling was lost.

During the 1970’s management began restoring the Raffles Hotel to its original luster. One of the items they wanted to bring back to the Long Bar was the Singapore Sling, since it was so popular in the earlier days of the Raffles Hotel. It is presumed during this rebuilding time one of Ngiam’s nephews was contacted and a close version of the original recipe was concocted. Over time this recipe has been modified rather drastically from the original, but with much broader appeal. The modernized version of the Singapore Sling is still served at the original Raffles Hotel and Long Bar. The drink is also complimentary on all Singapore Airlines flights to all passengers. What a deal!

What does the Singapore Sling have to do with the MGM Grand in Las Vegas? There is no Long Bar at the MGM Grand, but there is Nob Hill. Nob Hill is a San Francisco styled eatery with fresh produce and poultry flown in daily from San Francisco to capture the authenticity of the Bay Area. While the food is no doubt fabulous with its world class chef, Michael Mina, my focus is on the bar area with one drink in particular they have created. It is the Chinatown Sling based on the Singapore Sling from the Raffles Hotel. The Chinatown drink is a pitcher version of the Singapore Sling making it a perfect rendition for your next cocktail party. What makes this version of the Singapore Sling special is it will take the work out of the individualized cocktail while leaving the zing in the Sling.

The Singapore Sling is a time consuming drink to put together with its many ingredients. The individual cocktail has nine ingredients in dashes and quarter measures combined in a cocktail shaker and then strained into a Collins glass with two garnishes. The Singapore Sling has an orange slice and cherry garnish; both rather nice and fitting for this drink. All the work and time that goes into this cocktail are not in vain. It makes a tasty, complex drink with an equally nice pink hue. It is a classic listed among the International Bartenders Association fifty greatest cocktails. The time involved in putting an individual Singapore Sling together and the flavor make it ideal for ordering at a cocktail lounge. Someone else does the work. You enjoy your drink and companion.

The Chinatown Sling has an amazing color to it as well, but for added drama the Cherry Heering is left out of the pitcher combination until the very end and added as a topper to the individual drink instead. This allows the Cherry Heering to settle within the liquid instead of integrate into the drink giving the Chinatown Sling a visual layered effect. Add to that the equally complex flavor your guests will experience when they finally taste it and this makes for an excellent party drink. What works in your favor here is the Chinatown Sling is a pitcher drink made ahead of time with six ingredients rather than nine. Instead of working making drinks for your guests, you will be sipping a refreshing Chinatown Sling with them. Seeing and tasting is believing. As for the garnish, for your cocktail party, flee from the routine just as Nob Hill in Las Vegas veers from the run of the mill. The Chinatown Sling garnish should be a tropical pineapple spear and a cherry. There is no need to peel the pineapple. Leaving the pineapple with the skin on and then cut in long spears gives the Chinatown Sling a spectacular tropical finish. The cherry gives an extra dollop of color to an already fabulous drink for you and your guest’s sipping pleasure.

Media Release: The Singapore Sling Rediscovers Its Roots

June 1, 2007 – Raffles Hotel is delighted to establish Heering Cherry Liqueur as one of the key ingredients in the Singapore Sling, the legendary hot pink cocktail with a reputation of iconic proportions.

Raffles Hotel and Peter F Heering AB, which produces the Cherry Liqueur, have rich histories that started in the 1800s which became forever intertwined when Raffles Hotel’s Hainanese-Chinese bartender, Mr Ngiam Tong Boon, created the world-famous Singapore Sling, based on Peter Heering’s cherry brandy, in 1915.  This gives the Singapore Sling its distinctive pink colour.

A vintage 1888 bottle of the liqueur and a framed antique cork poster of the bottle were presented to the hotel by Mr Jörgen Tilander, owner of The Peter F Heering Company.  These two artefacts will be displayed in the hotel’s museum, where visitors may also view the safe in which Mr Ngiam locked away his precious recipe books, as well as the Sling recipe hurriedly jotted down on a bar-chit in 1936 by a visitor to the hotel who asked the waiter for it.

“We are honoured to be presented with a world-renowned brand that has had more than 180 years of producing the world’s finest cherry brandy.  Shared characteristics link the two timeless brands and form the platform for a relationship that will undoubtedly provide patrons with a truly memorable experience,” says Mr Robert Logan, General Manager of Raffles Hotel.

The classic Danish liqueur has been produced since 1818 and had by the 1850’s, already become an export success being shipped all over the world. The liqueur is made of premium small dark Stevens cherry which thrives on the long ripening period of the cool Nordic climate. The cherries are crushed together with stones, which give Heering Cherry Liqueur its characteristic hint of almond. The pulp is then steeped in spirit and a secret combination of spices that has been in the Heering family since 1818 is added before it is poured into great oak casks to mature a minimum of three years.

Recipe of Singapore Sling – Created at the Legendary Raffles Hotel

30 ml Gin

15 ml Heering Cherry Liqueur

120 ml Pineapple Juice

15 ml Lime Juice

7.5 ml Cointreau

7.5 ml Dom Benedictine

10 ml Grenadine

A Dash of Angostura Bitters

Garnish with a slice of Pineapple and Cherry

Raffles Hotel Museum was opened on 1 November 1991, the culmination of more than two years of research and tireless sourcing of memorabilia, prior to the Hotel’s restoration.  The history of the hotel, the other Grand Hotels of Asia and all the romance of travel in a bygone era, are brought to life in the Museum.  The success of the Museum is attributed to the donors in the Worldwide Heritage Search.

St. Patrick’s Day for the Tequila Minded: El Diamante del Cielo

Though widely celebrated, St. Patrick’s Day is not a nationally recognized holiday in the United States.  One would hardly discern this fact with all the fan fare that goes on from day break to last call, March 17, as busses roll into Irish pubs across the U.S. for “tours”.  This typically green holiday no longer remains for the Irish only.  Cocktail culture frequently pushes the limits of conventional holidays by continually fine-tuning, modifying and revamping the “norm” or ordinary into the exceptional.  Rather than the usual shot of Irish Whiskey, Irish Car Bomb or green beer this St. Patrick’s Day show your green spirit with these emerald hued 100% agave cocktails.
