Egg White

Flaxen Froth

There is no reason to give up fresh fruit flavor when confined to the winter months. This little number combines fresh pineapple with the wonderful infused flavor of Pineapple Vodka into one refreshingly light cocktail that doesn’t become bogged down with too much added sugar. The egg white creates foamy texture that lightens the load while bringing a bit of delicate nature to this beautifully simple cocktail.

5 chunks Fresh Pineapple

2 ounces Pineapple Vodka

1 Egg White or 1-1/2 ounce Egg Beaters Egg White

Muddle pineapple in mixing glass. Add vodka and egg white. Dry shake to blend in egg. Add ice. Shake to blend and chill, bringing mixture to nice frothy texture. Strain into chilled cocktail glass.

Avera Cocktail Finalists

I had to know.  Didn’t you?  Which one of the lucky Averna competition finalists will win and which Averna cocktail will it be.  These creative bartenders from around the nation have already made their way to Sicily by way of their talent and original recipes where they will compete at the Averna distillery.  One of them will also receive a $1,500 American Express gift card.  Hope they spend it all in one place; having a grand time in Sicily!

After reading through the cocktail creations these bartenders are shaking up, I can already say my work is cut out for me.  Not only do they sound tempting, but now I need to round up the ingredients. 

Damon Dyer’s cocktail, Tuesdays with Mole is an interesting concoction using two rums and egg white.  I found a slight variation of this on the new Ardent Spirits website using demerara syrup rather than Demerara Rum, but both created by Damon.  Hey, if it made the Regan’s Ardent Spirits cocktail listing this one must be unusually fabulous!

3/4 measure Averna

1/2 measure Demerara Rum

1/2 measure Lemon Juice

Egg White

Xocolatl Mole Bitters

Shake, shake, shake, strain into coupe glass.  Float 5 drops Xocolatl Mole Bitters.

Don Lee’s La Cola Nostra is rather different as a tall drink over ice.  What is so unusual about that?  It is topped off with champagne.  But the real rarity is the inclusion of Pimento Dram.  According to my research Pimento Dram is a liqueur from the Caribbean created from a small spicy pimiento berry which concentrates the flavors of cinnamon, nutmeg and clove together within one taste, thus allspice.

1/2 measure Simple Syrup

1/4 measure Pimento Dram

2 measures Moet White Star Champagne

Shake ingredients with ice, strain into a long glass with ice.  Top with champagne.

Jeff Hollinger’s Midnight in Sicily also stands apart from the other four using “Sicilian Style” Blood Orange agrodolce.  When speaking about cuisine, agrodolce is a traditional sweet and sour sauce made by reducing the elements of vinegar and sugar with the additions of wine, fruit and sometimes chocolate.  How Jeff manipulates the traditional into cutting edge in this cocktail will be intriguing.

1-1/2 measure Amaro Averna

1 measure Tanqueray Gin

1/2 measure “Sicilian Style” Blood Orange Agrodolce

5 to 6 Mint Leaves

Flamed Blood Orange Rind for Garnish

Combine ingredients in an ice filled cocktail shaker and shake for 20 to 30 seconds, or until well chilled.  Double strain through a fine meshed strainer into a chilled cocktail glass.  Garnish with the flamed blood orange rind. 

Thomas Waugh’s Hierba Buena Cocktail proves tequila is no longer reserved for the margarita.  Thomas takes the peppery spice of Don Julio Reposado and merges it with the multifaceted zest of Averna and the sweetness of Crème de Cacao.  The Hierba Buena Cocktail goes a step further in flavor complexity with the addition of mint cream on top. 

Hierba Buena Cocktail – Thomas Waugh

1-1/4 measure Averna

1-1/4 measure Don Julio Reposado Tequila

1/4 measure White Crème de Cacao

1 measure Heavy Whipping Cream

3 dashes Fees Mint Bitters

First make bitter mint cream: add mint bitters and heavy cream to a cocktail shaker.  Dry shake (no ice) for 30 seconds.  Set aside.  Then stir Averna, tequila and cacao in a mixing glass full of ice for 45 seconds.  Strain into a chilled cocktail glass.  Using a bar spoon, carefully layer the cream on top of the cocktail.  Garnish with shaved chocolate and fresh mint sprig.

Debbie Peek’s Anima Bella cocktail is creative for a number of reasons.  Once you see the photo, take a look at that garnish.  Now that is a garnish you do not see in the average lemon, lime, orange, olive, maraschino cherry garnish tray. This avant-garde bartender really thought outside the box.  The inclusion of fresh raspberries and blackberries with fresh citrus juice also makes this a standout selection for the competition.  Fresh fruits infuse more color and unique layering of flavor into a drink than spirits alone.  Another look at the photo and you will see the rich color shine through so well in the Anima Bella you can almost taste it.

1/4 measure Simple Syrup

5 Fresh Raspberries

3 Fresh Blackberries

In a Boston shaker add berries and fresh citrus.  Muddle.  Add Averna and gin.  Shake with ice.  Double strain into a chilled eight-ounce cocktail glass.  Using a wooden pick horizontally, place 2 citrus leaves vertically through the pick, then in a fan shape add thin slices of half moon lime wheels and then a raspberry.  On the lime slices, add the peel of the Minneola on top on the outside of the lime.  Place on the edge of the cocktail glass.

Surely it is five o’clock somewhere.  Cheers!

Review: DonQ Limon Rum

The versatility of vodka usually translates well as blank canvas for creating cocktails. Vodkas do vary in taste and viscosity, but they usually remain true to the “colorless, odorless, tasteless” description attached to them. This is ideal for crisp clean martinis and cocktails, but sometimes a little more depth and roll of the tongue lushness is desired when mixing and tasting. This is where it could be beneficial to substitute rum for vodka in some cocktails. This exchange also renders well when mixing with flavored vodkas and rums. If you’re a rum person but the recipe calls for vodka, change it up for experimental purposes.

Aroma: Lemony, but not the waxy “lemon Pledge” sort of scent that can often be attributed to some lemon vodkas, rums and lemoncellos. What you will find here is something closer to fresh, clean lemon feel without any biting, astringent edge.

Taste: Lemon with orange back. Hint of peel. Some sweetness. A little bite on the back end when sampled neat, but completely inoffensive.

It seems DonQ Limon would mix well with simple mixers such as sweet tea, watermelon juice, club soda with splash of simple syrup or even Sprite or 7-UP served on the rocks. However it also blends rather creatively with other mixers when taken a few steps further.

1/2 measure Lemon Juice

Egg White

3 dashes Angostura Bitters

Lemon Slice Garnish

Combine egg and liquids except bitters in cocktail shaker with ice. Shake thoroughly until frothy. Strain into rocks glass over fresh ice. Add bitters to the top. Garnish with lemon slice.

Omit the egg white if it really turns you off, but don’t leave the party without sampling this version of the traditional Sour. It’s summery, light, airy and difficult to put down once the first sip washes across the palate. Simply divine.

Tequila Corazon Blanco Tasting Notes

40% Alcohol. 100% Agave.

Aroma: Light. Soft. Sweet grass.

Taste: Sweetness. Lilt of softness. Milkweed. Heat. Honey. Pepper – black / red pepper flake. Reminds me a bit of peppery steak seasoning in the heat. More sips of the tequila reveal less and less of the honeyed milkweed in flavor, but more fire on the tongue.

Combine liquids in cocktail shaker with ice. Shake thoroughly to blend and chill. Strain into chilled cocktail glass. Garnish with lime wheel and cherry.

Nice vanilla cherry marshmallow aroma. Be sure to include the full amount of grenadine or this cocktail yields a wee bit on the tart side. Lovely presentation. Terrific alternative to the typical Margarita.

Hollywood Classic Cocktails

Divorce is such an ugly ordeal, especially for the likes of a man like Charlie Chaplin who amassed a huge fortune back in the day when Hollywood was quieter and in its fledgling years. Chaplin’s second wife sued for divorce and courts froze the assets of his $16 million estate this day in history. Talk about needing a few cocktails from the Ex-Files!

Interestingly one of Charlie Chaplin’s most notable characters is that of The Tramp which debuted in the 1914 motion picture, Mabel’s Strange Predicament. The film starred Mabel Normand as an elegant lady and Charlie as the convincing often drunk Tramp.  Mabel and The Tramp first meet in a hotel lobby.  An infamous scene is that of Mabel hiding beneath the bed of another in said hotel… The plot thickens.

Monday Night Football Kickoff Cocktails

If you listen closely in the distance the constant buzz and commotion of a fan base simmering with enthusiasm for the love of football can be heard before the first leaf of fall drops from the trees.  Love of football begins with small towns and little leagues to Friday night high school cross town rivalries and continues through college and beyond.  Living for the weekend isn’t just a saying when football season begins.  It makes Monday a little more bearable when the work week rolls around too.  Thank goodness for that little thing called Monday night football.

2 Lime Wedges

5 – 8 Mint Leaves

1/2 ounce Simple Syrup

1 ounce Stolichnaya Vanil Vodka

1 ounce Stolichnay Ohranj Vodka

1/2 ounce Midori Melon Liqueur

Club Soda

Muddle lime wedges and mint leaves with simple syrup in bottom of mixing glass.  Add ice, vodkas and liqueur.  Shake to blend and chill.  Strain into highball glass over fresh ice.  Top with club soda.

2 parts Effen Cherry Vodka

1 part Simple Syrup

3/4 part Fresh Lemon Juice

1 Egg White – optional

3 drops Angostura Bitters

Skewered Maraschino Cherries Garnish

Place liquids (and optional egg white if including) in cocktail shaker with ice. Shake thoroughly until frothy. Strain into rocks glass over fresh ice. Add bitters to top of drink. Garnish with skewer of maraschino cherries. Pasteurized Egg Beaters can be used in place of fresh egg whites if desired.

Welcome National Whiskey Sour Day with the Essential Basic Sour Recipe

Sours are one of the most challenging cocktails to nail down in proper proportion. Too much sour in the cocktail recipe and facial features distort as lips pucker to the distinct mouth watering bite in the tart flavor experience.  Adding too much sweet to the mix makes the sour drink something new altogether.  Though August 25 is earmarked as National Whiskey Sour Day it is possible to substitute a favorite base spirit for whiskey in a basic sour recipe.

2 ounces Base Spirit

3/4 ounce Sour (Fresh Lemon or Lime Juice)

1 ounce Sugar or Simple Syrup

Combine ingredients in cocktail shaker with ice.  Shake hard to chill completely and create frothy texture.  Strain into an Old Fashioned glass over fresh ice.  Garnish with lemon twist or orange slice with maraschino cherry.  When shaken properly, sour and sugar combination create fizzy top to the drink without the need for added egg white.

There are stories that circulate as to how the Whiskey Sour came into play within history.  According to some, the Whiskey Sour’s creation was in direct correlation to sailors fighting scurvy due to vitamin deficiency.  Preservation of the fruit due to long periods at sea made the creation of sour drinks part of natural progression.  Another tale weaves the story of an English steward who opened a bar in a Peruvian city.  His signature drink creation became known as the sour for its tart taste.  No matter the historical record of the Whiskey Sour or how sours in general came to be established in the saga of cocktails, there are always variations to the basic sour recipe for the sheer enjoyment of flavor delight.

Place juice from half a lemon or lime in bottom of mixing glass.

Sugar to Taste

Drink of Whiskey

Ice

Mix well. Strain and serve.

3/4 part Honey Syrup

3/4 part fresh Lemon Juice

1/2 part fresh Orange Juice

1 bar spoon Apricot Jam

1 small Egg White

3 dashes Angostura Bitters

Wide Orange Twist Garnish

Combine all ingredients (except bitters and garnish) in cocktail shaker with ice.  Shake vigorously to blend and chill.  Double strain into rocks glass over fresh ice.  Garnish with bitters and orange twist.

New York Sour

2 ounces Rye Whiskey or Bourbon

Juice of half a lemon

1/4 Simple Syrup to Taste

1/2 ounce Red Wine

Egg white Optional

Lemon Slice & Fresh Cherry Garnish

Combine whiskey, lemon juice and simple syrup (egg white optional) in cocktail shaker with ice.  Shake vigorously.  Strain into rocks glass over fresh ice.  Float red wine over top.  Garnish with lemon slice and fresh cherry.

The Modern Mixologist Mixes the All American Cocktail

Though Tony Abou-Ganim needs no introduction as the Modern Mixologist it makes perfect sense to say this man mixes up more than the modern martini, contemporary cocktail or avant-garde drink recipe.  Tony’s recipes dabble in the past with a fresh feel and uncomplicated spin that makes even the most hesitant home mixer certain of the cocktail recipe set before them.  The Modern Mixologist Contemporary Classic Cocktails weaves readers through basic classics with present day spin in ingenious ways to use spirits found on ordinary liquor store shelves.  Sure there are a fascinating infusions interlaced among the delightful treats of Cable Car lore and Zig Zag endings, but this is no ordinary read.

Dash Orange Bitters

1 teaspoon Egg White

Chilled Champagne

Place all liquid ingredients except champagne in cocktail shaker with ice.  Shake to blend and chill.  Strain into chilled cocktail coupe.  Top with champagne.  Notation: I used 1-1/2 ounce brut champagne for this cocktail.  Tony Abou-Ganim calls the spirit brands for this recipe and others in his book.  Brand names have been omitted in the recipe above.

Tony describes the origin of this cocktail creation in his book.  The various spirits symbolize various countries around the globe to celebrate the diversity, sophistication and uniqueness of New York City for a New Year’s tribute celebration.  You’ll find this cocktail featured on page 88 of Tony’s book, The Modern Mixologist Contemporary Classic Cocktailswith a more detailed account of its creative basis.

Red, White & Blue Cocktails

Fourth of July rings in the unofficial start of summer with picnics, parades, fireworks and steady flow of fun and laughter.  Keep everyone’s thirst refreshed with cocktails that utilize fresh fruits of the season and the sparkling colors of Red, White & Blue to correspond with Independence day celebrations.

Twisted utilizes a diet peach flavored water, but has no diet connotation in the drink.  The taste is fresh, light and definitely slurp worthy.

2 Fresh Pineapple Spears (1 inch x 3 inch)

1-1/2 ounce Peach Rum

2 ounces Welch’s Diet Peach Twist

1 ounce Club Soda or Brut Champagne

Muddle fresh fruit in bottom of mixing glass.  Add peach rum and Welch’s Diet Peach Twist with ice.  Shake to blend and chill.  Strain into highball glass or goblet over fresh ice.  Top with club soda or brut champagne according to preference.  Stir.

Pearl is an adaptation of the Perfect Margarita.  The real hook for Pearl is the garnish; olives.  Usually saved for classic martinis, the olive becomes the surprise find for this margarita.  My version pops up the heat with jalapeno stuffed olives. Nix the olives if they don’t float your boat, but definitely take this margarita out for a spin.

1 ounce Fresh Lime Juice

1/2 ounce Fresh Lemon Juice

3/4 ounce Agave Nectar

1/4 ounce Cointreau

Salt for Garnished Rim

Queen Size Jalapeño Stuffed Olives Garnish

Rim cocktail glass with salt and set aside.  Combine all liquid ingredients in cocktail shaker with ice.  Shake vigorously to blend and chill.  Strain into cocktail glass over ice or even better, serve straight up.  Garnish with skewered jalepeno olives.

When I think of blueberry vodka or blueberries in general, the old television series Happy Days and Richie singing “I found my thrill on blueberry hill…” starts jingling through my head.  Thrilled brings in the beautiful flavor of blueberries while allowing the sweetness of fresh pineapple to interweave into the mix.  Depending upon your sweet tooth, vary the simple syrup.  Fresh egg white adds a little froth and complexity to the drink, but isn’t necessary for a thrilling good time.

2 ounce Blueberry Vodka

1/2 ounce Fresh Lemon Juice

1/4 to 1/2 ounce Simple Syrup (according to taste)

1 Egg White – optional

Muddle pineapple and simple syrup in bottom of mixing glass.  If adding egg white, do so at this point and dry shake.  Add vodka, lemon juice and ice to mixing glass.  Shake to blend and chill.  Strain into chilled cocktail glass.Cheri Loughlin Photography - Cocktail Development & Photography Services
