Barefoot Holiday Sparkler

Homemade Grenadine

Many recipes call for a splash, dash or float of grenadine. Purchased grenadine is easy to come by, but doesn’t quite carry the same fresh flavor feel of homemade grenadine. Making this little bar staple is a breeze with just a few simple ingredients.

Homemade Grenadine – Cheri Loughlin variation

2 cups Pomegranate Juice

1 cup Sugar

1 ounce Vodka

Place pomegranate juice and sugar in saucepan over low heat. Heat until sugar is completely dissolved and mixture just begins to simmer. Remove from heat. Add vodka for preservative purposes if desired. Allow mixture to cool completely. Place in container with lid. Refrigerate.

Fresh pomegranate juice may be substituted for good quality bottled pomegranate juice. Get even more creative with grenadine by adding spices such as cinnamon, clove, nutmeg, etc.

Prohibition Era Spirit: Aperol

Aperol, introduced in Padua, Italy in 1919, set modern day standards ahead of its time by creating a spirit with a lower alcohol content of just 11%.  The trendy and easily adaptable Aperol inspired an aperitif that went on to become the signature drink of Italy; the Aperol Spritz.  Even today, the Aperol Spritz continues to thrive as a classic.  In a cocktail world spinning with new infusions and creations released on the market every day, a classic which has stood the test of time like Aperol should not be overlooked.

Aperol is a dark orange Italian aperitif with a sweet orange flavor.  It is made from a blend of base spirit, rhubarb, chinchona, genziana and of course the best kept secret of combination herbs.  While the Aperol Spritz is the clear-cut traditional Aperol cocktail to experiment with, there are of course many recipe creations to please the palate.  Hendrick’s Gin fashioned the Unusual Negroni using Aperol rather than Campari giving the classic a unique spin.  Various modern day mixologists have taken this pre-prohibition spirit in many flavorful directions for palate pleasing cocktails sure to delight the senses.  Celebrate Prohibition Repeal Day, Saturday, December 5, with an authentic prohibition era spirit; Aperol.

Aperol Spritz

2 measures Prosecco

1 measure Aperol

Splash of Soda Water

Orange Slice Garnish

Build over fresh ice in an Old Fashioned glass. Garnish with an orange slice if desired. 

Aperol Royal

3 measures Spumante Brut

1 measure chilled Aperol

Lemon Twist Garnish

Pour chilled Aperol into a champagne flute. Top off with chilled Spumante Brut. Garnish with lemon twist spiral if desired.

Aperol Betty

2 measures Aperol

2 measures Orange Juice

1 measure Grapefruit Juice

Grapefruit Slice Garnish

Combine liquids in a cocktail shaker with ice. Shake to blend and chill. Strain into a chilled cocktail glass. Garnish with thin slice of grapefruit on rim of glass.

Aperol Classico

1/2 measure chilled Aperol

Splash Sparkling Water

Orange Peel Garnish

Chill Aperol ahead of time. Add Aperol to chilled cocktail glass or champagne flute. Top with sparkling water. Garnish with orange peel twist.

Aperol on the Rocks

3-4 ice cubes

Orange Slice Garnish

Place Aperol in a rocks glass over fresh ice. Garnish with a fresh orange slice. Enjoy!

There was also a suggestion to use Limon Rum in place of the Spiced Rum and leave out the Lemon Juice all together. Mix things up a bit and rely on your own taste preference for playful tasting.

Review: Averna

Averna has a rich heritage beginning with Benedictine friars, honors bestowed by kings and the proud privilege to be identified as Sicily’s first licensed spirit.  Today the company, Fratelli Averna S.p.A., is run by the fourth generation of the Averna family and now includes the Friulian winery Villa Frattina and Piedmont confectioner Pernigotti.  By remaining firm to the traditions in which it was founded, Averna has grown and remained the number one spirit brand in Italy and leading Italian Amaro in markets around the world.

What is this Averna Amaro?  Simply; an after-dinner drink or digestivo.  However, there is nothing simple about this complex liqueur.  Averna is a complex spirit distilled from a delicate balance of flowers, herbs, dried fruits, spices and licorice with a touch of caramel.  This produces a full-bodied, bitter sweet finish to the taste buds.  Despite its classification as a digestivo, this liqueur is anything but. 

I tried the Averna four ways:  traditionally on the rocks, in Duggan McDonnell’s signature cocktail the Vertigo, and in two more cocktails supplied by the company; the Intercontinental and Sicilian Triangle. 

Averna on the rocks is a delicious blend of botanicals, luxuriantly textured and pleasantly composed which leave a unique balance of smooth bitter sweetness in its finish on the palate.  My experiences with after-dinner digestivos thus far have not had the polish in completion that Averna has mastered.  This is a beautifully, full bodied, complex sipping spirit.

Ginger Ale

Lime Wedge for Garnish

Stir lemon juice and ginger ale over ice in a highball glass leaving room for Averna.  Float Averna and garnish with a lime wedge.

The Vertigo is a refreshing highball drink made with ginger ale and a splash of lemon juice.  At first sip I thought it was average, but I built the drink in incorrect order and forgot to slip in a stir stick.  The Averna is a heavy aperitif, so it stays at the bottom of the glass if it is added first and time is not taken to gently stir.  My second sip was absolutely delightful.  There is a reason this is Duggan McDonnell’s signature cocktail.  The ginger ale is light enough to allow the Averna all of the glory in this drink with the perfect balance of lemon to give it that spring/summer feel. 

Intercontinental

1/2 measure Maraschino Liqueur

Orange Twist for Garnish

Combine all ingredients in a shaker and stir 30 times over ice.  Strain into cocktail glass and garnish with an orange twist.  (This one is a bit sweet.  Try adding a quarter ounce of lemon juice for tart or decrease the maraschino liqueur.  This is an excellent cocktail to tweak to your liking.)

The Intercontinental caught my eye in the recipe listings due to its use of maraschino liqueur and cognac.  The most common cocktail reference for maraschino liqueur is the Papa Doble or Hemingway Daiquiri.  A delicious cocktail if you have not tried one.  The intercontinental is very rich in color but comes across entirely too sweet for my tastes.  Possibly if some lemon juice were added to lend some tartness to the cocktail this could be cured.  I am not sure.  However, the Averna shines through magnificently and the maraschino liqueur is a perfect addition.  They both blend together well on the palate.  My thought is there are more cocktails to be rendered from the Averna and maraschino matchmaking. 

Sicilian Triangle

1 measure Pomegranate Juice

1/2 measure Orange Juice

1/2 measure Lemon Juice

Splash of Pineapple Juice

Pineapple Wedge for Garnish

Combine all ingredients into a cocktail shaker and shake vigorously over ice.  Strain into a cocktail glass and garnish with a pineapple wedge. (I used approximately 1/4 ounce of pineapple juice or less as a splash.)

For a bit of exotic, tropical fun the Sicilian Triangle is a must try on anyone’s Averna cocktail list.  It has a mix of rum and fruit juices along with the Averna to stir up good times.  With such a diverse blend of flavoring to this cocktail I was a little undecided as to whether the Averna would be able to hold its own in the drink.  With the first sip, pineapple is the primary flavor tasted.  Given only a moment, the lone pineapple flavor disappears leaving the real flavor of the cocktail to linger on the palate.  Once again, the Averna displays its true character throughout, leaving a well rounded mixed drink to enjoy in true Sicilian style.

Left to stand alone and sip or to rise above the rest in a cocktail glass, Averna definitely leaves its unique stamp on the spirit world.  With the unique flavor profile of this particular bitter sweet aperitif and its exceptional mixability, it is understandable how Averna has stood the test of time through four generations and is still the leading favorite Amaro of Italy.

Rainforest Romp Rendezvous

You find the one who makes your toes tingle and heart flutter.  The catch; the one is not your existing significant other.  A secret rendezvous might seem like a good idea, but think twice.  No one likes to get caught, but it is definitely the nature of the game when affairs of the heart are concerned.  Christopher Beam of Slate.com explores the pitfalls of the best laid plans of those politically connected when affairs of the heart come into play.  Rather than take the wayward course with ‘Dear John’ letter as end result, check out VeeV Acai Spirit’s Rainforest Romp for a tryst of the cocktail kind.

3 dashes Grenadine

Champagne

Rose Petal Garnish

Combine all ingredients except champagne in a cocktail shaker with ice.  Shake to chill.  Strain into a martini glass.  Top with champagne.  Garnish with rose petal.

Sipping a Bit ‘o Bubbly

Sparkling cocktails and champagne should not be relegated to times of celebration only.  Thank goodness holiday times and special occasions give many the extra nudge needed to pick up a bottle of bubbly for clinking glasses rather than the same old tried and true cocktail of the everyday.  Every Bit ‘o Bubbly cocktail doesn’t necessarily find its way into a champagne flute.  Often effervescent bubbles tickle at the nose by way of martini and cocktail recipes topped with champagne, prosecco and wonderful sparkling sake.  The following cocktails tickle at the nose by way with varying bubbles, but sip oh, so wonderfully.  Stay tuned for more dazzling cocktail recipes to tickly your fancy during the holiday season.

Cynthia Rowley chose Basil Hayden’s bourbon for her Spring 2010 collection show.  She even named the cocktail; the Basil Natural.  Her design team made sure the Basil Natural embodied her line’s whimsical spirit and call to nature. The cocktail is a refreshing twist on the typical Fashion Week beverage staples of champagne and vodka. It looks like brown spirits have become the fashionable trend among the stylish headliners of the fashion world.

Basil Natural

1 part Basil Hayden’s Bourbon

Soda Water

Squeeze of Lemon

Place Basil Hayden’s Bourbon in white wine glass. Fill with chilled soda water. Add squeeze of lemon. Garnish with small lemon wedge.

Sweet Tail

3 ounces Bulldog Gin

3 Mint sprigs

1 Vanilla Bean

3/4 oz Creme de Cassis

1 oz Simple syrup

Champagne

Muddle mint and sliced vanilla beans in mixing glass.  Add simple syrup and gin with ice.  Shake to blend.  Strain into chilled flute.  Top with champagne and crème de cassis.  Garnish with mint sprigs.

The Gilded Sapphire

1 part Bombay Sapphire Gin, chilled

1/2 part Elderflower Extract

2 drops Rose Water

3 dashes Moreland Champagne Bitters

2 parts Champagne

Place elderflower syrup, rose water and bitters into chilled martini glass.  Add chilled gin.  Top with champagne. Sprinkle cocktail with edible gold leaf.

Wild Thyme Bellini

1 ounce Berry Puree

1 ounce Raspberry Liqueur

4 ounces Barefoot Bubbly Brut Cuvee

Thyme Sprig Garnish

Muddle fresh wild berries or raspberries to create berry puree.  Combine puree and liqueur in cocktail shaker with ice. Shake to blend. Add Barefoot Bubble to shaker. Gently roll contents from end to end to combine.  Strain into chilled champagne flute.  Garnish with sprig of thyme.

New Year’s Sparkler

1 ounce SKYY Infusions Passion Fruit

1-1/2 ounce Pomegranate Juice

3-1/2 ounce Champagne

5-6 Fresh Raspberries Garnish

Place vodka and juice in cocktail shaker with ice. Shake to chill. Strain into chilled champagne flute.  Top with champagne.  Garnish with skewered raspberries placed vertically into champagne glass.

Stoli Angel Elixir

3 Strawberries

Muddle strawberries with vanilla sugar in bottom of mixing glass.  Add Stoli Gala Applik with ice.  Shake to blend and chill.  Strain into chilled champagne flute.  Top with rose sparkling dessert wine.  Garnish with edible gold dust and pink aphrodisiac rose petal.

Bitter Bubbles

1 ounces X-Rated Fusion Liqueur

1/2 ounce SKYY Infusions Passion Fruit

1/4 ounces Campari

Champagne

Lemon Twist Garnish

Place X-Rated Fusion Liqueur, vodka and Campari in cocktail shaker with ice. Shake to chill.  Strain into chilled champagne flute.  Top with champagne.  Garnish with fresh lemon twist.

1 ounce Grapefruit Juice

Champagne

Place ingredients in cocktail shaker with ice.  Shake to blend and chill.  Strain into chilled champagne flute.  Top with champagne.

Jingle My Bells Christmas Cocktails

The holiday spirit abounds from the time Thanksgiving weekend begins to the time New Year counts down.  Cocktail parties for the office, friends and neighbors provide occasions for gatherings with differing needs.  One might need punches and coffees for neighbors stopping in for a moment or two with greetings.   Family and friend type holiday parties require classic cocktails and specifically chosen martinis to suit particular palates since the gathering means hours of nibbling finger food and chatting over good times.  Office parties might suggest simpler martinis and cocktail recipes with fewer ingredients that still keep within the classic style yet appeal to a broader audience.

Holiday Neat

Christmas Fizz

2 ounces Right Gin

2 teaspoon Cranberry Jam

1 ounce Sweet Vermouth

1 ounce Fresh Lemon Juice

1/2 ounce Simple Syrup

1 Egg White

1 dash Peychaud’s Bitters

2 ounces Sparkling Water

Lemon Wedge and Cranberry Garnish

Place all liquid ingredients except sparkling water in mixing glass with ice.  Shake vigorously until frothy.  Add sparkling water to highball glass over fresh ice. Top with strained cocktail shaker mixture. Garnish with lemon wedge and cranberry.

Jack Frost

2 ounces Jack Daniel’s Tennessee Whiskey

2 Tablespoons Cherry Juice or Grenadine

1/4 cup Orange Juice

1/4 cup Sour Mix

Maraschino Cherries Garnish

Combine all liquid ingredients in cocktail shaker with ice. Shake to chill. Strain into rocks glass over fresh ice. Garnish with maraschino cherries.

p.i.n.k. Christmas Cocktail

1-1/2 ounce p.i.n.k. Vodka

1-1/2 ounce Godiva White Chocolate Liqueur

1 ounce Half & Half Cream

Splash of Frangelico

Splash of Chambord

Red Raspberries Garnish

Combine liquids in a cocktail shaker with ice.  Shake vigorously until frothy. Pour into a chilled martini glass. Garnish with skewered red raspberries.

Holiday Sangria – created by Chef Ryan Scott

1 bottle Dry Red Wine

1/4 cup Brown Sugar

1 cup Orange Juice

1 Orange, thinly sliced

1 Lemon, thinly sliced

2 whole Pink Grapefruit, peeled, seeded and segmented

1 Papaya, diced

1 Mango, diced

3/4 cup Red Grapes, halved

2 bottles Zipang Sparkling Sake

4 cups Ice cubes

Place wine and brown sugar in large pitcher.  Stir until sugar is completely dissolved.  Add in orange juice and fruits.  Let mixture stand for 30 minutes.  Divide between 8 serving glasses. Pour over fresh ice.  Top with sake.

Corzo Holly

1-1/2 parts Corzo Reposado Tequila

3/4 part Fresh Lime Juice

1 part Simple Syrup

3 Fresh Strawberries – Quartered

3 Fresh Basil Leaves

1/8 part Balsamic Vinegar

Fresh Strawberry Garnish

Muddle strawberries, basil leaves and vinegar in mixing glass. Add remaining liquid ingredients with ice. Shake to blend and chill. Strain into chilled martini glass. Garnish with fresh sliced strawberry.

Cazadorez Mistletoe Margarita

1-1/2 parts Tequila Cazadores Reposado

2 parts Pomegranate Juice

1/2 part Sour Mix

1/2 part Triple Sec

1/2 part Grenadine

Splash Fresh Lime Juice

Lime Wedge Garnish

Salt for Rim

Rim edge of rocks glass with salt if desired. Set aside. Combine all liquid ingredients in cocktail shaker with ice. Shake to blend and chill.  Strain into rocks glass over fresh ice. Garnish with lime wedge.

Silent Dos Lunas Night

1 ounce Dos Lunas Silver Tequila

1 ounce Pomegranate Juice

Chilled Champagne

Place tequila and pomegranate juice in cocktail shaker with ice. Shake to chill. Strain into chilled champagne flute. Top with champagne. Stir gently.

42Below Holiday Punch

1-1/2 parts 42Below Passionfruit

1 part Fresh Lime Juice

1/2 part Martini Rosso

1/2 part Benedictine

1 part Red Wine

1 part Spiced Syrup* (cinnamon, nutmeg, vanilla, orange peel, clove and star anise)

2 part Pink Grapefruit Juice

Garnish with fruits of choice.

*Spiced Syrup – 2 parts Sugar, 1 part water: Dissolve over low heat with cinnamon, nutmeg, vanilla, orange peel, clove and star anise spices added in. Allow to cool.

Place all ingredients in large pitcher. Stir. Add large block of ice. Serve immediately.

G’ingle Bell

1 ounce G’vine Nouaison

1/4 ounce Lillet Blanc

1/2 ounce Apple Liqueur

1/2 ounce Simple syrup

1/4 ounce Lime Juice

Place ingredients in cocktail shaker with ice. Shake to blend and chill. Strain into cocktail glass.

Sleigh Ride

4 ounces Hot Apple Cider

1 ounce Averna

2 ounces Whiskey

1/2 teaspoon Honey

Cinnamon Stick

Place Averna and whiskey in heat proof mug.  Add hot cider and honey.  Stir with cinnamon stick.  Allow cinnamon stick to infuse into drink for a few minutes before serving.

Christmas Snowball

1/4 ounce Anisette or Pernod Absinthe

1/4 ounce Crème de Violette

1/4 ounce Heavy Cream

1/4 ounce White Crème de Menthe

1 ounce Plymouth Gin

Place all ingredients in cocktail shaker with ice. Shake thoroughly to blend and chill. Strain into chilled champagne flute.

Tinsel Bellini

2 ounces HPNOTIQ

1 ounce Limoncello

1 ounce Champagne

Splash of lime juice

Sugar for Rim

Rim chilled champagne flute with sugar. Set aside. Place Hpnotiq, limoncello and lime juice in mixing glass with ice. Stir or shake to chill. Strain into sugar rimmed champagne flute. Top with champagne.

White Christmas

1 ounce Right Gin

1 ounce Baileys Irish Cream

1/2 ounce Bénédictine

1/2 ounce Half & Half

Fresh Grated Nutmeg and Cinnamon Garnish

Place all liquid ingredients in mixing glass with ice.  Shake to blend and chill.  Strain into cocktail glass or dessert wine glass.  Dust with nutmeg and cinnamon.

Candy Cane Swirl

1 ounce SKYY Infusions Raspberry

3 ounces Cranberry Juice

1/2 ounce Grenadine

1/2 ounce Peppermint Schnapps

Sprite or 7Up

Candy Canes

Rim chilled martini glass with crushed candy cane.  Combine SKYY Vodka, Peppermint Schnapps, Cranberry Juice and Grenadine into a cocktail shaker with ice. Shake vigorously to chill. Strain into candy cane rimmed martini glass.  Top with splash of Sprite.  Garnish with small peppermint candy cane.

Berry Merry Christmas

1-1/4 ounce Right Gin

3/4 ounce Pomegranate Liqueur

2 ounce Pomegranate Blueberry Juice

1/4 ounce Blueberry Syrup

3 dashes Blood Orange Bitters

2 wedges Lime (squeezed)

1 ounce Sparkling Wine

Fresh Strawberries and Blueberries Garnish

Place all liquids except sparkling wine into cocktail shaker with ice. Shake to chill. Strain into highball glass over fresh ice. Top with sparkling wine. Garnish with sliced strawberries and blueberries.
