Homemade Chocolate Raspberry “Liqueur”

There are a few spirits that sit back on the liquor cabinet shelf that I haven’t used in a while. On a whim I have begun playing with a few of those forgotten partially used bottles of liquor. The result isn’t always great, but sometime a winner comes through. Chocolate Raspberry Liqueur is one of those winning combinations. It turned out so well I made a special batch for a chocolate and raspberry loving friend for Christmas.

Chocolate Covered Raspberry 1 Card

Chocolate Raspberry Liqueur – created by Cheri Loughlin

1/2 cup Demerara Sugar

1/2 cup Water

2 cups Frozen Raspberries (unsweetened)

1/2 Cutie – Juiced, save the leftover peel after juicing

2 cups Chocolate Vodka

Heat sugar, water, raspberries, juice & peel in saucepan over low heat. Bring to simmer. Remove from heat. Double strain to remove all pulp. Allow to cool. Pour raspberry syrup & 2 cups Chocolate Vodka in bottle with lid. Refrigerate.

Serve over ice or shake with ice & serve up in chilled cocktail glass.

Fragaria Fizz

Mmmm… Strawberry tart edge with lovely raspberry sweetness rolling lightly over the tongue. Play time never tastes so celebratory. Bonus… this is a mocktail so anyone can join in on the delicious sipping any time!

6 Fresh Strawberries

1/2 measure Raspberry Syrup

1-1/2 measure Orange Juice

1-1/2 measure Club Soda

Muddle 5 fresh strawberries and the raspberry syrup in mixing glass. Add orange juice with ice. Shake to blend and chill. Strain into champagne flute. Top with club soda. Garnish with remaining strawberry.

Fragaria is the technical name for Strawberry. Ironically strawberries are not actually berries.

Raspberry Spice Syrup

Raspberry Spice Syrup uses baking spices that can be found in many household pantries. Its versatility makes this a wonderful addition to cocktail recipes and can be used as a delicious syrup topping for pancakes or ice cream.

2 cups Brown SugarSimple Syrups - Grenadine DSC_0005 - photo copyright Cheri Loughlin

1 cup Water

12 ounce Fresh or Frozen Raspberries

2 Whole Cinnamon Sticks

1 teaspoon Whole Cloves

2 teaspoons Mace (dried aril of nutmeg spice)

1 ounce Orange Juice

1-1/2 ounce Vodka (as preservative)

Place all ingredients except vodka in saucepan over medium low heat. Stir continuously while bringing mixture to slow simmer. (Simmer for a few minutes if thicker syrup is desired) Remove from heat. Allow to cool. Stir in vodka as preservative if desired. Strain into container with lid. Store in sealed container in the refrigerator.

1/2 measure Raspberry Syrup

3/4 measure Lemon Juice

3 measures Barefoot Pink Moscato

Combine juices and syrup in cocktail shaker with ice. Shake to chill. Strain into champagne flute. Top with Barefoot Pink Moscato.

Crimson Raider

Fresh, flavorful and lower calorie; it’s a completely delicious way to enjoy Happy Hour. The Cognac aroma comes across immediately, but it is the color of this cocktail that draws one in to devour it fully!  Fresh blackberries are wonderful when ripe and in season. Take advantage of their hearty lushness. Quality unsweetened frozen blackberries will also do in a pinch when that thirst for summer just has to be quenched in the dead of winter.

5 Blackberries

1/4 measure Raspberry Sugar Free Syrup

1-1/2 measure Cognac

1 measure Light Cranberry Juice

1/8 measure Fresh Lime Juice

3 Skewered Blackberries Garnish

Muddle blackberries and sugar free syrup in the bottom of a mixing glass. Add cognac, cranberry and lime juices with ice. Shake to blend and chill. Strain into chilled cocktail glass.  Garnish with three skewered blackberries. Total approximate calories based upon 1 measure equals 1 ounce:125 calories

Family Friendly Hot Chocolate & Coffee Recipes

Coffee and hot chocolate drinks are hot commodities year round, but become warming indulgences especially during winter months and holiday times. While spirited versions are always delicious to sip, it is also nice to have non-alcoholic mocktail recipes on hand for times we want to relax without the buzz or have as optional serve for those too young to consume alcohol. The coffee and hot chocolate recipes below are listed as non-alcoholic recipes with notations for ways to sweeten the deal into spirited blends if preferred. Ten more hot chocolates with variety of spirits can be found on the site as well as coffees, teas and ciders.  Additional hot brews using a variety of spirits may also be of interest.

Morning never tasted so sweet as a tall cup of chilled coffee after numerous cups of steaming hot brew.  Nilla Frappe gives off hints of vanilla tipped off by the sweetness of caramel, followed by the decadence of whipped topping.

1 unit International Delights French Vanilla

1/2 ounce DaVinci Caramel Syrup

Whipped Cream Garnish

Combine liquids over fresh ice.  Stir.  Top with whipped cream.  Notation: Take this delicious non-alcoholic treat to the next level with a splash of Navan, Butterscotch schnapps or Licor 43 in exchange for the International Delights French Vanilla.

The buzz surrounding caffeinated bliss is really all that it’s jazzed up to be according to one source; in moderation of course.  In other words – please drink responsibly.

1 package Hot Chocolate

Whipped Cream

Chocolate Sauce

Place dollop of chocolate sauce in bottom of heatproof coffee container.  Add half of coffee amount and then package of hot chocolate.  Stir thoroughly.  Add remaining coffee.  Top with whipped cream.  Drizzle chocolate sauce on top. Notation: Make the Triple Threat go the extra mile by adding a splash of Crème de Cacao or Godiva for extra chocolaty goodness, Voyant Chai for hint of something different or Castries Peanut Rum Creme for a hint of Reeses flair.

It is the simple self-indulgent luxuries we use to lift our spirits and keep us going those few hours more during the morning that keep spirits lively throughout the day.  Chocolate Marsh is precisely the most decadent offering of the day.  Choose this tasty morsel as sumptuous start or lush ending to the day.

1 unit International Delight Hazelnut Coffee Creamer

4 ounces Hot Coffee

Marshmallow Topping

Whipped Cream

Nutmeg

Swirl marshmallow topping in heatproof coffee container.  Add white chocolate syrup, coffee creamer and hot coffee.  Top with whipped cream.  Sprinkle with nutmeg. Notation: Bring this non-alcoholic coffee to the next level by substituting Frangelico Liqueur and Godiva White Chocolate Liqueur for the syrup and coffee creamers.

A hot, steamy straight pour is usually my preferred choice for the first rounds of java, but every once in a while a delicious dessert style cup of coffee stirs my interest.  The Razz is a warm, creamy dessert style coffee for any time of year, but especially lovely during winter months.  Since The Razz coffee recipe contains no alcohol it may be enjoyed day or evening.

5 ounces Hot Coffee

Whipped Cream Garnish

Combine liquids in heatproof coffee container.  Add whipped topping garnish. Notation: The Razz easily steps up to a notch by substituting Raspberry Liqueur for the raspberry syrup.
