Ginger Vanilla Syrup

This Ginger Vanilla Syrup was created specifically for use while sampling the Penicillin Cocktail. However, it would be a terrific addition to dark rum Daiquiri’s. I could also see pairing the Ginger Vanilla Syrup with some of the more herbal liqueurs, lemon juice and then topping with brut champagne. This might also pair nicely with vanilla based liqueurs and citrus vodkas and rums. Just experiment. Cocktails are supposed to be fun!

The Ginger Vanilla Syrup I created is listed below and posted with the Penicillin Cocktail. This syrup is spicy sweet, caramel in color and delicious.

You can use fresh ginger if you choose, but I opted for Gourmet Garden Ginger Paste. You can find it in the fresh produce aisle. I like it because it’s quick and easy to use. There isn’t any peeling or chopping. It really is a no fuss, no muss product.

Just eyeball level tablespoons when measuring the ginger paste.

Demerara Ginger Vanilla Syrup 267

Your strainer is going to get a little heavy with ginger pulp. Take a spoon and pull some of the ginger away from one side of the strainer. Tilt the strainer so the syrup can flow through the section you’ve cleared. Then just be patient.

The syrup needs to cool, so just let it sit and finish dripping. Don’t press any of the solid ginger through the strainer.

3 Tablespoons Garden Gourmet Ginger Paste

1 cup Demerara Cane Sugar

2/3 cup Water

1 ounce Homemade Vanilla Extract

Place ginger, sugar and water in saucepan over low heat. Stir continuously until sugar has melted and mixture begins to lightly bubble. Remove from heat. Double strain into heat resistant measuring cup. Allow to cool for 10 to 15 minutes. Add vanilla. [store purchased Vanilla Extract may be substituted] Stir. Once syrup is completely cool, place in glass container with lid. Keep refrigerated until ready to use.

Raspberry Spice Syrup

Raspberry Spice Syrup uses baking spices that can be found in many household pantries. Its versatility makes this a wonderful addition to cocktail recipes and can be used as a delicious syrup topping for pancakes or ice cream.

1 cup Water

12 ounce Fresh or Frozen Raspberries

2 Whole Cinnamon Sticks

1 teaspoon Whole Cloves

2 teaspoons Mace (dried aril of nutmeg spice)

1 ounce Orange Juice

1-1/2 ounce Vodka (as preservative)

Place all ingredients except vodka in saucepan over medium low heat. Stir continuously while bringing mixture to slow simmer. (Simmer for a few minutes if thicker syrup is desired) Remove from heat. Allow to cool. Stir in vodka as preservative if desired. Strain into container with lid. Store in sealed container in the refrigerator.

3/4 ounce Vodka

1/2 ounce Blueberry Lavender Syrup

1/4 ounce Fresh Lemon Juice

3 ounces Brut Champagne

Lemon Twist Garnish

Combine vodka, syrup and lemon juice in cocktail shaker with ice. Shake to blend and chill. Strain into champagne flute. Garnish with lemon twist.

Blueberry Lavender Syrup

Homemade flavored syrups are a terrific way to add unique flavor to cocktails and non-alcoholic drinks. Add syrup to champagne or club soda for a quick and easy tasty treat. This particular syrup goes the extra mile by providing double duty at the breakfast table. Blueberry Lavender Syrup is wonderful drizzled over pancakes and waffles.

8 cups Sugar

4 cups Water

1 pound fresh or frozen Blueberries

1/2 cup Lavender

Zest & Juice of 1 Lemon

Place all ingredients in saucepan over medium low heat. Stir continually until liquid begins to simmer. Remove from heat. Strain into heat proof container with lid. Store in refrigerator.

Coffee Syrup

It’s fun to discover new flavored syrup recipes by using ingredients you already have in the pantry. Dark Sumatra Syrup or coffee syrup is one of those recipes. This syrup recipe came about while searching for variations on the Espresso Martini. It indeed contributes wonderfully to the Dark Sumatra Martini, but also adds depth to your morning brew.

Dark Sumatra Syrup / Coffee Syrup – created by Cheri Loughlin

1 cup Demera Cane Sugar

1/2 cup Double Strong Fresh Brewed Coffee

1 ounce Vodka – optional

Brew coffee using double the amount of dark roast coffee beans / ground coffee. Place sugar and coffee in sauce pan over low heat. Stir continuously until sugar is completely dissolved and mixture has come to a soft simmer. Remove from heat. Add in optional ounce of vodka as preservative. Allow to cool. Place in sealed container. Keep refrigerated.

*I used Sumatra coffee. Brown sugar could be used in place of Demera Cane Sugar. Demera Cane Sugar contains hint of molasses which works very well in this syrup. Demera Cane Sugar can be found at many corner grocery stores on the sugar / baking aisle.
