Review: The Pink Pigeon Mauritian Rum

Color: Darker side of gold. Reminds me of end of season dried out cornfields in color.

Aroma: Just like smelling a bottle of vanilla extract. No burn. Sweet aroma.

Tasted Neat: Sweet enough to taste like vanilla liqueur. Coffee notes. Very much vanilla in flavor. Perfumed. Sort of mixing an average tasting rum with nice mouth feel with a good quality vanilla liqueur.

Mouth Feel: Somewhere in the lower range of medium.

Comparable Spirit: Marginally less sweetness than vanilla liqueur, but very much flavored like one. Not at all like any usual rum.

Possible Uses, Pairings and / or Cocktails:

The Pink Pigeon Rum _DSC3895 photo copyright Cheri LoughlinGreat base for homemade vanilla. This isn’t your ordinary Mojito or Daiquiri rum. Possibly a fruited daiquiri such as watermelon would work well. Might also pair nicely with warmed Horchata or add a splash to warmed chai tea.

Homemade Vanilla: 1 Vanilla Bean sliced to open. Place in glass jar. Fill with vanilla noted rum. Seal. Store in dark area. Lightly shake every few days. Allow flavor to meld with rum for 30 to 60 days. Use as you would vanilla extract. Vanilla bean can be used in next batch of vanilla by repeating the first steps. The second batch might take longer to achieve the same flavor profile as the first batch.

1 ounce Canned Coconut Milk

1 ounce Sweetened Pineapple Juice

3/4 ounce Fresh Lemon Juice

2 ounces Pink Pigeon Rum

Several Heavy Dashes Angostura Bitters

Top with Orange Crush Soda

Build over ice in small pitcher. Alternative: multiply batch according to number of servings needed. Build over block of ice in punch bowl.

7 ounces Pink Pigeon Rum

3 ounces Fresh Lemon Juice

3/4 ounce Agave Nectar

7 ounces Fresh Watermelon Juice

12 ounces Ginger Beer

Watermelon Wedge Garnish

Build over ice in punch bowl or pitcher. Stir. Ladle into punch glasses with watermelon garnish.

3/4 measure Triple Sec

1/4 measure Watermelon Schnapps

1/2 measure Lemon Juice

8 – 1 inch Watermelon Chunks

Muddle seven watermelon chunks and lemon juice in mixing glass. Add remaining liquids with ice. Shake to blend and chill. Strain into highball glass over fresh ice. Garnish with remaining watermelon chunk.

If you can’t take the heat… perhaps combine a little spice with watermelon and tequila. El Toro is spicy sweet goodness with terrific summery feel. But do be careful. The light watermelon flavor does pack fabulous spicy heat.

1/4 Red Chili Pepper – seeded

1/4 measure Lemon Juice

Watermelon Slice Garnish

Place watermelon chunks and red chili pepper in mixing glass. Muddle to release juice and chili pepper spice flavor. Add remaining liquids with ice. Shake to blend and chill. Strain into large rocks glass over fresh ice. Garnish with watermelon slice.

Jalisco Sweet Heat

Warm summer days call for cool sips to beat the hit. Jalisco sweet heat brings fresh watermelon flavor with tinge of heat mingling with succulent sweetness. The sweet heat pairing gives this drink a hit of straight from the vine freshness clear down to the blush of the rind.

4 large pieces Watermelon (1” x 1-1/2”)

1 Tablespoon Hot Pepper Jelly

1/2 measure Lemon Juice

Muddle watermelon, jelly and lemon juice in mixing glass. Add tequila and ice. Shake vigorously to completely blend mixture. Double strain into large rocks glass over fresh ice.

Want the rush of Jalisco Sweet Heat when fresh watermelon is out of season? Bottled watermelon juice found in the refrigerated juice section substitute for fresh watermelon in a pinch, but it is not quite as sweet and deeply flavored as fresh watermelon. Add approximately 1/4 to 1/3 measure Watermelon Schnapps to the recipe to make up for the flavor difference.

Sugar or Honey to taste – optional

8 to 12 ounces Ice

3 measures Barefoot Pink Moscato

Kiwi Colada

Decadent fresh fruit flavor. Coconut comes through lightly rather than with sweetened bite. Faint watermelon in the background finished this drink off to completion. Pale green color makes this drink a fun choice for St. Patrick’s Day.

1 Fresh Kiwi – peeled & sliced

1 measure Cream of Coconut

6 Fresh Pineapple Chunks

12 ounces Ice

Kiwi Slice Garnish

Place all ingredients except garnish in blender with ice. Blend until completely smooth. Pour into goblet or decorative cocktail glass. Garnish with kiwi slice.

Rosy Melon

Tequila comes through rather nicely. It is essential to pinch the rosemary spring before placing it into the cocktail as garnish to release the aroma and a bit more herbal flavor within the drink. This allows more fresh feel giving this cocktail a summery, light, sweet aura.

1/4 measure Rosemary Syrup*

1-1/2 measure 100% Agave Tequila

Rosemary sprig garnish

Muddle watermelon and rosemary syrup in mixing glass. Add tequila and ice. Shake to blend. Strain into rocks glass over fresh ice. Pinch or slap rosemary sprig to release aroma before placing in glass as garnish. 

Rosemary Syrup

1/2 cup water

1 cup sugar

3 to 4 Rosemary Sprigs

Combine water and sugar in a small saucepan over medium heat. Bring to a gentle boil, stirring frequently allowing sugar to dissolve completely. Toss in rosemary sprigs and remove from heat. Allow to cool completely. Strain into airtight glass container. Refrigerate between uses.

Wild for Watermelon

Fresh lemon juice gives the Red Melon the semblance of watermelon rind without the bitterness of the real thing.  Adding Jim Beam Bourbon to the Red Stag cuts through a portion of the sweetness.  Using fresh watermelon as flavoring means no extra added sugar in the form of liqueurs or simple syrup.  This cocktail comes across very fresh.  For richer Red Stag flavor leave out the Jim Beam Bourbon without increasing any other ratios in the cocktail.

1/2 measure Jim Beam Bourbon

1/2 measure Fresh Lemon Juice

Watermelon Chunks for Garnish

Place watermelon chunks in a mixing glass.  Muddle.  Add Red Stag, Jim Beam Bourbon and lemon Juice with ice.  Shake.  Strain into a large rocks glass over fresh ice.  Garnish with a skewer or fresh watermelon chunks.
