I’m a huge fan of bubbly cocktails. This variation on the Peach Bellini is no different. It’s so delicious and pretty simple to make. The recipe also includes fun flavored cake vodka. I tried the recipe with each of the cake vodkas mentioned in the recipe. All work really well, so use whichever one you prefer.
The Piece of Cake Peach Bellini can also be served in a chilled cocktail glass instead of champagne flute. It feels a little more “Happy Hour” than “Brunch” served that way.
Piece of Cake Peach Bellini Recipe
Piece of Cake Peach Bellini – recipe by Cheri Loughlin, The Intoxicologist
3 ounces Peach Fusion Sparkling Wine
1/2 ounce Cake Vodka, Iced Cake Vodka or Whipped Vodka
1 ounce Orange Juice
1 ounce Heavy Syrup from Canned Peaches
Diced Peach Slices and Fresh Raspberry
Place diced peaches and raspberry in well of champagne flute or cocktail glass. Place vodka, orange juice and syrup in a cocktail shaker with ice. Shake until chilled. Strain into a champagne flute or cocktail glass. Top with Peach Fusion Sparkling Wine.
