The Raspberry Watermelon Mojito takes advantage of fresh raspberries and succulent watermelon. It is light and refreshing; perfect for what we can only hope are long warm days ahead. The recipe below calls for traditional club soda topper, but take this recipe into celebratory mode by using champagne or bubblies instead.
Raspberry Watermelon Mojito Drink Recipe
Raspberry Watermelon Mojito – recipe by Cheri Loughlin, The Intoxicologist
1-1/2 ounce Shellback Silver Rum
1/2 ounce Lime Juice
1/2 ounce Simple Syrup
10 to 12 Mint Sprigs
3 Watermelon Cubes – 1-1/2 x 1-1/2 inch roughly
6 Fresh Raspberries
1-1/2 ounce Club Soda
Mint Leaf Garnish
Muddle mint leaves, watermelon and raspberries in bottom of a cocktail shaker. Add rum, lime juice and simple syrup with ice. Shake vigorously to incorporate mint flavor into mixture. Strain into tall glass over fresh ice. Top with club soda. Garnish with mint leaf.
