3 dashes Peychaud’s Bitters

Combine ingredients in a cocktail shaker with ice.  Shake to blend and chill.  Strain into a chilled cocktail glass.

Famous New Orleans Drinks & How to Mix ‘Em by Stanley Clisby Arthur, 1937

2 parts Brandy or Rye whiskey

1 dash Peychaud’s Bitters

1 dash of Angostura Bitters

1 teaspoon Sugar

1 teaspoon Absinthe

Rinse an old fashioned glass with absinthe.  Discard excess. Stir remaining ingredients together gently in cocktail shaker with ice.  Strain into the absinthe-coated glass.

1/4 part Pernod Absinthe

Combine ingredients in an iced tumbler. Stir well.  Strain into chilled cocktail glass.

1/2 oz Clement Creole Shrubb

1/4 oz Captain Morgan 100

2 dashes Fee Bros. Peach bitters

2 dashes angostura bitters

8-10 mint leaves

1 Demerara Sugar Cube

Muddle sugar, Creole Shrubb and bitters until sugar is dissolved in a 10 oz. tall glass. Add mint and press to express oils. Add cracked ice. Add Cruzan and Captain Morgan 100 and stir until frost appears on outside of glass. Garnish with mint sprig.

3/4 part Fresh Lemon Juice

1 part Passion Fruit Syrup

1-1/2 part Orange Juice

1-1/2 part Pineapple Juice

Dash of Angostura Bitters

Combine all ingredients in a cocktail shaker with ice.  Shake.  Strain into a hurricane glass over fresh ice.  Garnish with slices of fresh tropical fruit and maraschino cherries if desired.

3/4 part Lemon Juice

1/2 part Simple Syrup

Sparkling wine

Combine Gin, juice and simple syrup in a cocktail shaker with ice.  Shake to blend and chill.  Strain into a champagne flute.  Top with champagne.  Garnish with fresh lemon twist.

Try another variation of the French 75 using Cognac.

Jingle My Bells Christmas Cocktails

The holiday spirit abounds from the time Thanksgiving weekend begins to the time New Year counts down.  Cocktail parties for the office, friends and neighbors provide occasions for gatherings with differing needs.  One might need punches and coffees for neighbors stopping in for a moment or two with greetings.   Family and friend type holiday parties require classic cocktails and specifically chosen martinis to suit particular palates since the gathering means hours of nibbling finger food and chatting over good times.  Office parties might suggest simpler martinis and cocktail recipes with fewer ingredients that still keep within the classic style yet appeal to a broader audience.

Christmas Fizz

2 ounces Right Gin

2 teaspoon Cranberry Jam

1 ounce Sweet Vermouth

1 ounce Fresh Lemon Juice

1/2 ounce Simple Syrup

1 Egg White

1 dash Peychaud’s Bitters

2 ounces Sparkling Water

Lemon Wedge and Cranberry Garnish

Place all liquid ingredients except sparkling water in mixing glass with ice.  Shake vigorously until frothy.  Add sparkling water to highball glass over fresh ice. Top with strained cocktail shaker mixture. Garnish with lemon wedge and cranberry.

Jack Frost

2 ounces Jack Daniel’s Tennessee Whiskey

2 Tablespoons Cherry Juice or Grenadine

1/4 cup Orange Juice

1/4 cup Sour Mix

Maraschino Cherries Garnish

Combine all liquid ingredients in cocktail shaker with ice. Shake to chill. Strain into rocks glass over fresh ice. Garnish with maraschino cherries.

p.i.n.k. Christmas Cocktail

1-1/2 ounce p.i.n.k. Vodka

1-1/2 ounce Godiva White Chocolate Liqueur

1 ounce Half & Half Cream

Splash of Frangelico

Splash of Chambord

Red Raspberries Garnish

Combine liquids in a cocktail shaker with ice.  Shake vigorously until frothy. Pour into a chilled martini glass. Garnish with skewered red raspberries.

Holiday Sangria – created by Chef Ryan Scott

1 bottle Dry Red Wine

1/4 cup Brown Sugar

1 cup Orange Juice

1 Orange, thinly sliced

1 Lemon, thinly sliced

2 whole Pink Grapefruit, peeled, seeded and segmented

1 Papaya, diced

1 Mango, diced

3/4 cup Red Grapes, halved

2 bottles Zipang Sparkling Sake

4 cups Ice cubes

Place wine and brown sugar in large pitcher.  Stir until sugar is completely dissolved.  Add in orange juice and fruits.  Let mixture stand for 30 minutes.  Divide between 8 serving glasses. Pour over fresh ice.  Top with sake.

Corzo Holly

1-1/2 parts Corzo Reposado Tequila

3/4 part Fresh Lime Juice

1 part Simple Syrup

3 Fresh Strawberries – Quartered

3 Fresh Basil Leaves

1/8 part Balsamic Vinegar

Fresh Strawberry Garnish

Muddle strawberries, basil leaves and vinegar in mixing glass. Add remaining liquid ingredients with ice. Shake to blend and chill. Strain into chilled martini glass. Garnish with fresh sliced strawberry.

Cazadorez Mistletoe Margarita

1-1/2 parts Tequila Cazadores Reposado

2 parts Pomegranate Juice

1/2 part Sour Mix

1/2 part Triple Sec

1/2 part Grenadine

Splash Fresh Lime Juice

Lime Wedge Garnish

Salt for Rim

Rim edge of rocks glass with salt if desired. Set aside. Combine all liquid ingredients in cocktail shaker with ice. Shake to blend and chill.  Strain into rocks glass over fresh ice. Garnish with lime wedge.

Silent Dos Lunas Night

1 ounce Dos Lunas Silver Tequila

1 ounce Pomegranate Juice

Chilled Champagne

Place tequila and pomegranate juice in cocktail shaker with ice. Shake to chill. Strain into chilled champagne flute. Top with champagne. Stir gently.

42Below Holiday Punch

1-1/2 parts 42Below Passionfruit

1 part Fresh Lime Juice

1/2 part Martini Rosso

1/2 part Benedictine

1 part Red Wine

1 part Spiced Syrup* (cinnamon, nutmeg, vanilla, orange peel, clove and star anise)

2 part Pink Grapefruit Juice

Garnish with fruits of choice.

*Spiced Syrup – 2 parts Sugar, 1 part water: Dissolve over low heat with cinnamon, nutmeg, vanilla, orange peel, clove and star anise spices added in. Allow to cool.

Place all ingredients in large pitcher. Stir. Add large block of ice. Serve immediately.

G’ingle Bell

1 ounce G’vine Nouaison

1/4 ounce Lillet Blanc

1/2 ounce Apple Liqueur

1/2 ounce Simple syrup

1/4 ounce Lime Juice

Place ingredients in cocktail shaker with ice. Shake to blend and chill. Strain into cocktail glass.

Sleigh Ride

4 ounces Hot Apple Cider

1 ounce Averna

2 ounces Whiskey

1/2 teaspoon Honey

Cinnamon Stick

Place Averna and whiskey in heat proof mug.  Add hot cider and honey.  Stir with cinnamon stick.  Allow cinnamon stick to infuse into drink for a few minutes before serving.

Christmas Snowball

1/4 ounce Anisette or Pernod Absinthe

1/4 ounce Crème de Violette

1/4 ounce Heavy Cream

1/4 ounce White Crème de Menthe

1 ounce Plymouth Gin

Place all ingredients in cocktail shaker with ice. Shake thoroughly to blend and chill. Strain into chilled champagne flute.

Tinsel Bellini

2 ounces HPNOTIQ

1 ounce Limoncello

1 ounce Champagne

Splash of lime juice

Sugar for Rim

Rim chilled champagne flute with sugar. Set aside. Place Hpnotiq, limoncello and lime juice in mixing glass with ice. Stir or shake to chill. Strain into sugar rimmed champagne flute. Top with champagne.

White Christmas

1 ounce Right Gin

1 ounce Baileys Irish Cream

1/2 ounce Bénédictine

1/2 ounce Half & Half

Fresh Grated Nutmeg and Cinnamon Garnish

Place all liquid ingredients in mixing glass with ice.  Shake to blend and chill.  Strain into cocktail glass or dessert wine glass.  Dust with nutmeg and cinnamon.

Candy Cane Swirl

1 ounce SKYY Infusions Raspberry

3 ounces Cranberry Juice

1/2 ounce Grenadine

1/2 ounce Peppermint Schnapps

Sprite or 7Up

Candy Canes

Rim chilled martini glass with crushed candy cane.  Combine SKYY Vodka, Peppermint Schnapps, Cranberry Juice and Grenadine into a cocktail shaker with ice. Shake vigorously to chill. Strain into candy cane rimmed martini glass.  Top with splash of Sprite.  Garnish with small peppermint candy cane.

Berry Merry Christmas

1-1/4 ounce Right Gin

3/4 ounce Pomegranate Liqueur

2 ounce Pomegranate Blueberry Juice

1/4 ounce Blueberry Syrup

3 dashes Blood Orange Bitters

2 wedges Lime (squeezed)

1 ounce Sparkling Wine

Fresh Strawberries and Blueberries Garnish

Place all liquids except sparkling wine into cocktail shaker with ice. Shake to chill. Strain into highball glass over fresh ice. Top with sparkling wine. Garnish with sliced strawberries and blueberries.

Scotch Cocktail Recipes: Bobby Burns & My Darling

Last week a new cocktail creation contest rolled out on The Intoxicologist Facebook page: Scotch.  Participants were invited to create a simply made cocktail using five ingredients or less.  Participants were welcome to use scotch of their preference, but I would be recreating the cocktails with Glenfiddich Single Malt Scotch and Grant’s Blended Scotch. 

When I stopped in at a local bar & restaurant, Boiler Room, that serves fabulous old style cocktails this past weekend, the bartender asked if I’d like to try a Scotch cocktail he had been playing around with for the new cocktail menu; the Bobby Burns.  Bobby Burns isn’t new, but Chris put a great new spin on it with the inclusion of barely there allspice rim that he and the chef worked out.  There is also a little fiddling with the ingredient ratios that make Bobby Burns a Boiler Room knock out.

1-1/2 part Carpano Antiqua Formula

1/4 part Benedictine

Lemon Twist

Allspice

Combine Glenfiddich, Carpano and Benedictine in a mixing glass with ice.  Stir until chilled.  Strain into a cocktail glass.  Dip fresh lemon strip twist into fresh allspice.  Rub lemon twist with allspice around rim of cocktail glass and place twist in cocktail. 

Chris’ take on the Bobby Burns cocktail flavors out fabulously with allspice rounding out the deal.  The aroma lures one in for the first sip.  Carpano Antiqua Formula creates an excellent sounding board for the Glenfiddich Scotch.  Benedictine leaves just enough spice in the finish.  The kicker here is the allspice.  It definitely begins the cocktail and seals the deal beginning to end. 

After tasting through entries for the scotch cocktail creation contest Bob Stafford’s, My Darling, took winning place.  There were a handful of great entries, but My Darling kept the integrity of Scotch flavor in mind and simplicity for duplication at the same time.

1-1/2 parts Grant’s Blended Scotch*

1/2 part Cointreau

1/2 part Plymouth Sloe Gin

1/2 part Fresh Squeezed Clementine Juice

2 dashes Regan’s Orange Bitters

Combine ingredients in cocktail shaker filled 1/2 way with ice. Shake and strain into chilled cocktail glass.  Rub rim of glass with a Clementine twist and garnish drink with the twist. *Bob used Johnnie Walker Black Blended Scotch Whisky

This cocktail rang out a little sweeter than my preferred taste for cocktails, especially Scotch cocktails – however My Darling plays to the strengths of Scotch rather than cover it up.  This is a great cocktail for someone who wants to play with the flavor of Scotch without going hard core straight on the rocks.

Poker Night Drink Recipes for a ‘Full House’ Halloween Party

With Halloween on the table this month Poker Night plays out to be a great theme for a gangster style, casino or Monte Carlo Halloween party.  Party planning could range from simple to extravagant depending upon the number of guests invited.  With the purchase of poker chips and cards all you need is a good game to get the party started.  Go Monte Carlo style with glitz, glamour and luxury making the night a black tie affair.  Take the casino route with multiple table games available to guests.  A gangster theme gives guests the opportunity to dress in the fashion of Al Capone, the characters of The Godfather or more modern versions such as The Sopranos.  Once the style has been chosen a few drinks are in order.  Serve up rounds of these great cocktails and you’re sure to have a ‘full house’.

Ante – Essential Bartender’s Guide, Robert Hess

3/4 ounce Dubonnet Rouge

1/2 ounce Premium Orange Liqueur

1 dash Classic Bitters

Combine in a cocktail shaker with ice.  Shake.  Strain into a cocktail glass.

Robert Hess created a lovely cocktail that touches upon classic style.  Ante retains lush color and rich character.  Dubonnet reaches out first in flavor, but then the brandy character caresses the palate with substantial strokes of layered personality.  Ante is quite the cocktail.  Though the cocktail didn’t last long enough in the glass to test my theory, I’m certain this one would be just as delicious if it sat warming to room temperature when the games begin.  After all poker is all about bluffing and one can’t do that with a glass in one hand all the time!

1/8 ounce Lemon Juice

1/8 ounce Maraschino Liqueur

2 dashes Orange Bitters

Cherry Garnish

Combine in a cocktail shaker with ice.  Shake.  Strain into a cocktail glass.  Garnish with cherry.

Gin lovers will love this one, because Casino primarily tastes of gin with a little bitter zing and Maraschino liqueur flair just barely wafting off the back end.  The great thing about that is Casino definitely won’t distract from the primary focus; poker.  This drink recipe gives a minor variation to remotely flavored martini without all the sugary fuss.  The cherry garnish possibly adds too much girlish charm for such a ‘manly’ game, so do away with it if it’s too much to deal with, but the small amount of flavor does add to the flavor layering.  Besides, if you lose the round you can always make a side bet on how fast you can tie that cherry stem. 

Another great cocktail to keep in mind while betting the house; Lady Luck found in the recent Twilight Zone recipe pairing post.  Lady Luck combines Armagnac, pear liqueur and champagne.  The Twilight Zone theme would also be a fantastic Halloween theme party this holiday season.

The Robert Hess Monte Carlo taste will vary in degrees depending on which Rye Whiskey you choose.  I happened to try Sazerac Rye.  The flavor of the cocktail turned out deep in spice and leaned heavily toward the sweet side, sticking in the back of the throat a little.  However the color is terrific.  It’s difficult to go wrong with spirits such as Rye Whiskey or Benedictine.  The ratios of this mix just need a little fine tuning for my particular palate, but that is the sporting nature of cocktail creation.  There is nothing sacred about a recipe where your particular taste is concerned.  Tweak it to your own liking.

5 White Grapes

1-1/2 ounce Gin

1/2 ounce Grappa

1/2 ounce Lemon Juice

3/4 ounce Simple Syrup

1 dash Orange Bitters

White Grape Garnish

Muddle grapes in bottom of mixing glass.  Add in remaining liquid ingredients.  Add ice.  Shake to blend and chill.  Strain into a cocktail glass.  Garnish with a sliced grape resting on rim of glass.

3 ounces Templeton Rye Whiskey

1 ounces Grand Marnier

Splash of Champagne

Dash of Bitters

Combine Templeton Rye, bitters & Grand Marnier in shaker. Shake well, strain in martini glass. Float champagne & garnish with lemon twist.

Templeton Rye is fabulous served neat, but I made my getaway with The Capone.  Who could resist Templeton Rye Whiskey, Grand Marnier and champagne?  A combination such as this is downright dastardly and yet splendid!  Templeton Rye is definitely “The Good Stuff.”  Templeton Rye has succeeded in blending the history of this original American spirit into the whiskey itself.  There is warmth, sentiment and flavor of the past within this particular spirit.

1 ounce Gin

1 ounce Coffee Liqueur

1/4 ounce Absinthe

Combine in a cocktail shaker with ice.  Shake.  Strain into a cocktail glass.

Mint Leaf Garnish

Stir gin and lemon juice in mixing glass with ice.  Strain into champagne flute.  Top with champagne, leaving room for crème de menthe.  Carefully drizzle crème de menthe over the top.  Garnish with mint leaf.

The winner takes all in Monte Carlo.  This green hued cocktail could double for holiday themed parties or St. Patrick’s Day celebrations, but the name lends itself well to poker night and betting the house.  Crème de Menthe is subtle with a wee bit of tartness of the citrus settling the sweetness score.  Gin does not carry through in the least as it is outshined by the other multi-layered flavors.  Savor winning in style with a celebratory toast of champagne with this bubbly version Monte Carlo.

Buffalo Trace Bourbon: Sophisticated Sipper, Cocktail Diverse

As I sit sipping a Buffalo Trace Manhattan looking at a nearly empty bottle with Bourbon Heritage Month almost over the thought that keeps skipping through my head…thank goodness Buffalo Trace Bourbon is Buffalo Trace Bourbon Neat - photo copyright Cheri Loughlinavailable locally.  Not quite nationwide, but they’re working on it I hear.

Buffalo Trace Bourbon’s aroma is a little dry with a hint of cherry, orange and suggestion of cinnamon.  Possibly a wee bit of vanilla.  Not sugary, but not the slightest insinuation of bitterness either.  Come to think of it, the longer Buffalo Trace Bourbon sits in the glass the more aroma of clove comes to the forefront.  The flavor comes across highly sophisticated yet not pretentious or overwhelming.  The flavors meld in such a way that each is distinct without overtaking the other.  Buffalo Trace Bourbon comes together in perfect harmony, ideally balanced, beautifully blended.  This bourbon no doubt has been crafted to satisfy the palate of cutting edge bourbon enthusiasts and seasoned consumers alike. 

Bourbon is often consumed straight, on the rocks or with a single ice cube, but in this day and age when cocktails reign supreme and classic drinks have come full circle in popular culture, it makes sense to shake things up a bit and pull a little Buffalo Trace Bourbon into the mix.

Brighton Punch

1-1/2 parts Buffalo Trace Bourbon

1-1/2 parts Benedictine

2-1/2 parts Pineapple Juice

2 parts Lemon Juice

Pineapple Wedge & Cherry Garnish

Combine all liquids in a cocktail shaker with ice.  Shake to blend and chill.  Strain into a highball glass over fresh ice. 

I halved the recipe and served it straight up.  Brighton Punch has very pinapple-ish notes with small amount of Benedictine follow through.  Buffalo Trace only shows through in the warming effect.  However, this would definitely make a wonderful holiday cocktail party punch served over ice.  Definite sipper with a lemony tart bite that isn’t overbearing.  An additional note: When a cocktail is just too large to savor cold for the duration of sipping at a comfortable pace, serve half of the cocktail in a sidecar.  Keep the sidecar in a small container of ice to keep the cocktail vessel chilled without watering down the liquid refreshment.

Because sometimes we want our bourbon cocktails and stay lower calorie – so men will watch our girlish figures and we won’t have to…

1 part Light Cranberry Juice

Orange Twist Garnish

Combine liquid ingredients in a cocktail shaker with ice.  Shake to blend and chill.  Strain into a cocktail glass.  Garnish with orange twist. 

The Wentworth cocktail was created by Sharon Cooper at Harvest Restaurant in Pomfret, Connecticut, according to Difford’s Guide #7.  Difford’s Guide is a great cocktail resource by the way.  Pick one up if you don’t have it.  The original recipe calls for regular cranberry juice.  One substitution of Light Cranberry juice turns the table on this cocktail making it a lower calorie cocktail of approximately 116 calories.  The flavor is lush and rich, so flavor hasn’t given up in the substitution.  Beautiful and complex, yet easily sippable.  Vermouth stars, but Buffalo Trace Bourbon definitely carries the weight in this luxuriant cocktail.

If you haven’t had the opportunity to sample Buffalo Trace Bourbon, do so.  Try it at the corner bar or take the plunge and order it online if it isn’t available locally.  This bourbon is worth the wait, worth the order, worth the trip to the store.  It has terrific heritage behind the brand with many more classic to contemporary recipes to choose from should your palate drive you beyond the herd to try something a little cocktail diverse.

Singapore Sling with Zing

What do the Raffles Hotel in Singapore and the MGM Grand in Las Vegas have in common? On the surface, it would appear not much. Closer examination may reveal the answer to your next drink order or cocktail party punch; the Singapore Sling or the Chinatown Sling.

While the Raffles Hotel is named after Sir Stamford Raffles, the founder of modern day Singapore, in the world of bartending the Raffles Hotel is more widely known as the home of the Singapore Sling. It was in the Long Bar at the Raffles Hotel where Ngiam Tong Boon is said to have invented the Singapore Sling sometime between 1910 and 1915. The recipe for this drink was such a secret that it was kept locked away in a safe along with Ngiam’s other recipe books. Somewhere along the way, however, the original recipe to the Singapore Sling was lost.

During the 1970’s management began restoring the Raffles Hotel to its original luster. One of the items they wanted to bring back to the Long Bar was the Singapore Sling, since it was so popular in the earlier days of the Raffles Hotel. It is presumed during this rebuilding time one of Ngiam’s nephews was contacted and a close version of the original recipe was concocted. Over time this recipe has been modified rather drastically from the original, but with much broader appeal. The modernized version of the Singapore Sling is still served at the original Raffles Hotel and Long Bar. The drink is also complimentary on all Singapore Airlines flights to all passengers. What a deal!

What does the Singapore Sling have to do with the MGM Grand in Las Vegas? There is no Long Bar at the MGM Grand, but there is Nob Hill. Nob Hill is a San Francisco styled eatery with fresh produce and poultry flown in daily from San Francisco to capture the authenticity of the Bay Area. While the food is no doubt fabulous with its world class chef, Michael Mina, my focus is on the bar area with one drink in particular they have created. It is the Chinatown Sling based on the Singapore Sling from the Raffles Hotel. The Chinatown drink is a pitcher version of the Singapore Sling making it a perfect rendition for your next cocktail party. What makes this version of the Singapore Sling special is it will take the work out of the individualized cocktail while leaving the zing in the Sling.

The Singapore Sling is a time consuming drink to put together with its many ingredients. The individual cocktail has nine ingredients in dashes and quarter measures combined in a cocktail shaker and then strained into a Collins glass with two garnishes. The Singapore Sling has an orange slice and cherry garnish; both rather nice and fitting for this drink. All the work and time that goes into this cocktail are not in vain. It makes a tasty, complex drink with an equally nice pink hue. It is a classic listed among the International Bartenders Association fifty greatest cocktails. The time involved in putting an individual Singapore Sling together and the flavor make it ideal for ordering at a cocktail lounge. Someone else does the work. You enjoy your drink and companion.

The Chinatown Sling has an amazing color to it as well, but for added drama the Cherry Heering is left out of the pitcher combination until the very end and added as a topper to the individual drink instead. This allows the Cherry Heering to settle within the liquid instead of integrate into the drink giving the Chinatown Sling a visual layered effect. Add to that the equally complex flavor your guests will experience when they finally taste it and this makes for an excellent party drink. What works in your favor here is the Chinatown Sling is a pitcher drink made ahead of time with six ingredients rather than nine. Instead of working making drinks for your guests, you will be sipping a refreshing Chinatown Sling with them. Seeing and tasting is believing. As for the garnish, for your cocktail party, flee from the routine just as Nob Hill in Las Vegas veers from the run of the mill. The Chinatown Sling garnish should be a tropical pineapple spear and a cherry. There is no need to peel the pineapple. Leaving the pineapple with the skin on and then cut in long spears gives the Chinatown Sling a spectacular tropical finish. The cherry gives an extra dollop of color to an already fabulous drink for you and your guest’s sipping pleasure.

Singapore Sling

1/2 ounce Heering Cherry

1/4 ounce Cointreau

1/4 ounce Benedictine

Dash of Angostura Bitters

2 Dashes Grenadine

1/2 ounce Fresh Lime Juice

Club Soda (optional)

Garnish with Orange Slice and Cherry

Combine all ingredients except club soda and garnishes in a cocktail shaker filled 1/3 full with ice. Shake to blend. Strain into a Collins glass filled 1/2 to 2/3 full with ice. Top off with club soda. Garnish with the orange slice curved into a half moon on a cocktail pick and a cherry.

Chinatown Sling

16 ounces Pineapple Juice

10 ounces Rangpur Gin

4 ounces Cointreau

4 ounces Benedictine

1 Scant Teaspoon Angostura Bitters

2 ounces Heering Cherry

Garnish with Pineapple Spears and Maraschino Cherries

Combine all ingredients except Cherry Heering and garnishes in a pitcher. Refrigerate until well chilled; approximately two hours. Stir. Fill old fashioned glasses with ice. Fill with Chinatown Sling mixture within half inch of top. Top each glass with 1/4 ounce of cherry liqueur. Garnish with pineapple spear and cherry.

Media Release: The Singapore Sling Rediscovers Its Roots

June 1, 2007 – Raffles Hotel is delighted to establish Heering Cherry Liqueur as one of the key ingredients in the Singapore Sling, the legendary hot pink cocktail with a reputation of iconic proportions.

Raffles Hotel and Peter F Heering AB, which produces the Cherry Liqueur, have rich histories that started in the 1800s which became forever intertwined when Raffles Hotel’s Hainanese-Chinese bartender, Mr Ngiam Tong Boon, created the world-famous Singapore Sling, based on Peter Heering’s cherry brandy, in 1915.  This gives the Singapore Sling its distinctive pink colour.

A vintage 1888 bottle of the liqueur and a framed antique cork poster of the bottle were presented to the hotel by Mr Jörgen Tilander, owner of The Peter F Heering Company.  These two artefacts will be displayed in the hotel’s museum, where visitors may also view the safe in which Mr Ngiam locked away his precious recipe books, as well as the Sling recipe hurriedly jotted down on a bar-chit in 1936 by a visitor to the hotel who asked the waiter for it.

“We are honoured to be presented with a world-renowned brand that has had more than 180 years of producing the world’s finest cherry brandy.  Shared characteristics link the two timeless brands and form the platform for a relationship that will undoubtedly provide patrons with a truly memorable experience,” says Mr Robert Logan, General Manager of Raffles Hotel.

The classic Danish liqueur has been produced since 1818 and had by the 1850’s, already become an export success being shipped all over the world. The liqueur is made of premium small dark Stevens cherry which thrives on the long ripening period of the cool Nordic climate. The cherries are crushed together with stones, which give Heering Cherry Liqueur its characteristic hint of almond. The pulp is then steeped in spirit and a secret combination of spices that has been in the Heering family since 1818 is added before it is poured into great oak casks to mature a minimum of three years.

30 ml Gin

15 ml Heering Cherry Liqueur

120 ml Pineapple Juice

15 ml Lime Juice

7.5 ml Cointreau

7.5 ml Dom Benedictine

10 ml Grenadine

A Dash of Angostura Bitters

Garnish with a slice of Pineapple and Cherry

Raffles Hotel Museum was opened on 1 November 1991, the culmination of more than two years of research and tireless sourcing of memorabilia, prior to the Hotel’s restoration.  The history of the hotel, the other Grand Hotels of Asia and all the romance of travel in a bygone era, are brought to life in the Museum.  The success of the Museum is attributed to the donors in the Worldwide Heritage Search.
