This Papa Doble Punch is loosely based on the Hemingway Daiquiri or Papa Doble cocktail. This variation uses Maraschino Cherry Infused Rum. This infusion is simple to make with ingredients found out local grocery stores. The recipe for Maraschino Cherry Infused Rum can be found with the delicious summery Cherry Limeade drink. It is also used in the Maraschino Cherry Sour cocktail and the Cherries Jubilee hot coffee drink.

The Papa Doble Punch is lightly sweetened with a hint of tartness in the background. It is simply refreshing for a warm day.

Papa Doble Punch Single Serve

Vanilla syrup can be found on the coffee aisle at local grocery stores. I usually use DaVinci Vanilla or French Vanilla. Another common brand is Torani. Both brands have many flavors and are available in sugar-free. I used Target brand Simply Balanced for the sparkling grapefruit juice. IZZE sparkling grapefruit juice and Perrier sparkling mineral water in grapefruit flavor are two others that I’ve used. All are terrific options

Papa Doble Punch – recipe by Cheri Loughlin

1-1/2 ounce Silver Rum

1/2 ounce Maraschino Cherry Infused Rum (recipe)

1/2 ounce fresh Lime Juice

3/4 ounce Vanilla Syrup

1-1/2 ounce Sparkling Grapefruit Juice

Lime Twist

Place rums, lime juice and syrup in a cocktail shaker with ice. Shake to blend. Strain into a large rocks glass or goblet over ice. Top with sparkling grapefruit juice. Garnish with lime twist.

Serves 8

12 ounces Silver Rum

4 ounces Maraschino Cherry Infused Rum

4 ounces fresh Lime Juice

6 ounces Vanilla Syrup

12 ounce Sparkling Grapefruit Juice

Lime Wheels

Place rums, lime juice and vanilla syrup in a pitcher. Stir. Refrigerate until ready to use. When ready top with sparkling grapefruit juice. Pour into glasses over ice. Float a lime wheel on top.
